Abstract

PURPOSE: A method for preparing isomalt used as a sweetening agent is provided which is prepared by isomerization sucrose into isomaltolose using the immobilized microorganisms. CONSTITUTION: Isomaltulose (6-O-alpha-D-glucopyranosyl-D-pructofuranose) is prepared by contacting a solution containing sucrose with viable isomaltolose-forming microorganisms immobilized on a porous particulate carrier material comprising a weakly basic anion exchange material in the form of an inert and substantially noncompressible solid matrix and recovering the isomerization product from the solution. Isomalt is prepared by contacting a solution containing sucrose with viable isomaltolose-forming microorganisms immobilized on a porous particulate carrier material comprising the weak basic anion exchange material, hydrogenating the isomaltulose to isomalt and recovering the product from the solution. The weak base anion exchange material is a material having primary, secondary and/or tertiary amino groups.
