Abstract

Arranged in the installation space (17) is a steam generator (36) which, independently of the heating means (35) in the treatment space (16), generates the steam required for the treatment of the food products as necessary and releases it into the treatment space (16). Arranged in the connecting pipe (41) between the steam generator (36) and the treatment space (16) is the transducer of a flow meter (55), by means of which the steam generator (36) and thus the amount of steam for the treatment space (16) is controlled.
