Verfahren zum Herstellen von Käse natürlicher Reifung
Die Erfindung bezieht sich auf ein Verfahren zum Herstellen von Weich- oder Schnittkäse unter na- türlicher Reifung.
Bei Weich- und Schnittkäse sind der Eigenart des Käses entsprechende Mikroorganismen am Reife- prozess beteiligt. Neben verschiedenen Bakterien treten bei bestimmten Labkäsesorten, wie Camembert,
Brie usw., auch Edelschimmelpilze auf. Diese Schimmelpilze sind entweder als Aussenschimmel (Camem- bert, Brie) oder als Innenschimmel (Roquefort) bekannt. Schliesslich sind auch einige Käsearten bekannt, bei denen ausser einem gezüchteten Innenschimmel ein wild gewachsener Aussenschimmel vorkommt.
Dieser Aussenschimmel macht aber nicht nur die Rinde ungeniessbar, sondern es verleiht dem Käse ein wenig appetitliches und ansprechendes Aussehen.
Schliesslich hat man auch schon versucht, verschiedene Mikroorganismengruppen bestimmter Ge- schmacksrichtungen an ein und demselben Käse zur Wirkung zu bringen, um dadurch Käse zweier oder mehrerer Geschmackswerte zu schaffen. Zu diesem Zweck hat man einer gereiften Käsemasse an ihrem
Reifungsprozess nicht beteiligte Miktroorganismen einer andern Käsesorte beigemischt und in der so erhal- tenen Mischung eine weitere Reifung vor sich gehen lassen.
Aufgabe der Erfindung ist es demgegenüber, einen Weich- oder Schnittkäse zu schaffen, bei dem mindestens zwei verschiedenartige Edelschimmelpilze voneinander getrennt, jedoch im wesentlichen gleichzeitig wachsend, auftreten, um dadurch ausser dem Geschmack auch das Aussehen des Käses zu verbessern.
Das Verfahren zur Lösung dieser Aufgabe ist gemäss der Erfindung dadurch gekennzeichnet, dass man der Ausgangsmilch eine oder mehrere Pilzreinkulturen zufügt, die gebildete Bruchmasse vor dem Einfül- len in die Formen von der Molke befreit, auf den fertig geformten Käse eine oder mehrere andersartige
Pilzreinkulturen aufbringt und anschliessend den Käse zunächst bei der für den bzw. die schneller wach- sendenAussenschimmel günstigsten Temperatur und dann bei der für den bzw. die Innenschimmel günstig- sten Temperaturen zwecks Reifung lagert.
Als besonders geeignet haben sich hiebei für den Innenschimmel ein Blau- oder Grünedelschimmel oder eine Mischung hieraus und für den Aussenschimmel ein Weissschimmel ergeben.
Das Aufbringen der Pilzreinkultur für den Aussenschimmel geschieht vorteilhaft durch Baden des Käses in einer verdünnten Pilzkultur. Hiedurch wird die Pilzkultur besonders gleichmässig auf den Käse verteilt.
Um dem Innenschimmel genügend Entwicklungsraum zu geben, wird die Molke vor dem Ausformen der Bruchmasse in den Formen weitgehend aus der Käsemasse entfernt. In einfacher Weise geschieht dies durch Aufschütten der Bruchmasse auf einen Ablauftisch und gegebenenfalls durch Pressen der Masse.
Um zu vermeiden, dass Schimmelsporen der in die Ausgangsmilch gegebenen Pilzreinkulturen für den Innenschimmel durch die ablaufende Molke weggeschwemmt werden, sieht die Erfindung auch die
Möglichkeit vor, die Pilzreinkultur in Verbindung mit Kochsalz, vorteilhaft mit 1/2 - 2 Teilen Salz pro
1 Teil Kultur, der Bruchmasse nach dem Ablauf des Grossteiles der Molke zuzuführen. Hiedurch wird ein sehr intensives Wachstum des Innenschimmels, der zudem im Käse sehr gleichmässig verteilt ist, gewon- nen. Wird die Pilzreinkultur für den Innenschimmel vorerwähnter Weise der Bruchmasse zugegeben, so wird die Pilzreinkultur für den Aussenschimmel zweckmässig durch Aufsprühen auf die ausgeformten Käse- stücke aufgebracht.

Schliesslich sieht die Erfindung ferner vor, die Reifung des Käses unter Berücksichtigung der optimalen Reifungsverhältnisse durchzuführen. Es hat sich gezeigt, dass die Schimmelbildung der an sich verschiedenartigen Pilze besonders gut vor sich geht, wenn innerhalb der ersten drei Tage der Reifungszeit der Käse bei etwa 140C und einer Luftfeuchtigkeit von 801o und sodann während der restlichen drei Tage bei etwa 11 C und der gleichen Luftfeuchtigkeit gelagert wird. Da 140C Lagertemperatur für den Weissschimmel günstig sind, wird somit das Wachstum dieses Schimmels zuerst und dann nach dem Senken der Temperatur auf die für den Blauschimmel günstigste Temperatur dieser im Wachstum gefördert.
Nach dem erfindungsgemässen Verfahren hergestellter Weichkäse zeichnet sich infolge der Symbiose von mindestens zwei essbaren Schimmelarten durch besonderen Geschmack, längere Haltbarkeit und ansprechendes Aussehen aus.
Beispiel l : Nachdem der Säuregrad der Milch eingestellt ist, wird bei einer Temperatur von etwa 320C das Lab zugegeben. In diese Kesselmilch werden Blauschimmelkulturen (Penicillium per Gorgonzola) eingesät. Nach einer Dicklegungszeit von etwa 25 Minuten und erfolgter Bruchbearbeitung wird die Bruchmasse auf einen Ablauftisch ausgeschüttet. Hier kann die Bruchmasse bereits mittels eines Tuches aus der Wanne herausgehoben oder auf ein auf dem Ablauftisch aufgelegtes Tuch aufgeschüttet werden. Nach dem Ablaufen der Molke wird die Bruchmasse in die Formen geschöpft. Der Käse verbleibt sodann zwischen vier und sieben Stunden in den Formen bei einer Anfangstemperatur von etwa 28 bis 35 C, die dann auf etwa 11-18 C gesenkt wird.
Nachdem der Käse aus den Formen genommen ist, werden die Käsestücke am nächsten Tag in einer Weissschimmelkultur (Penici1lium-camemberti) gebadet und anschliessend in üblicher Weise gesalzen. Hierauf kommt der Käse zur Reifung, u. zw. etwa drei Tage bei einer Temperatur von 140C und einer Luftfeuchtigkeit von 800/0. Diese Zustandsverhältnisse sind besonders günstig für das Wachstum des Camembertschimmels. Anschliessend wird die Reifungstemperatur auf etwa 110C gesenkt, welche für den Blauschimmel besonders günstig ist. Bei letzterer Temperatur wird hingegen das Wachstum des Weissschimmels'eingedämmt, was wesentlich ist, da das Wachstum des Blauschimmels im Inneren des Käses wesentlich langwieriger ist.

Verfahren zum Herstellen von Weich- oder Schnittkäse unter natürlicher Reifung, dadurch gekennzeichnet, dass man der Ausgangsmilch eine oder mehrere Pilzreinkulturen zufügt, die gebildete Bruchmasse vor dem Einfüllen in die Formen von der Molke befreit, auf den fertig geformten Käse eine oder mehrere andersartige Pilzreinkulturen aufbringt und anschliessend den Käse zunächst bei der für den bzw. die schneller wachsenden Aussenschimmel günstigsten Temperatur und dann bei der für den bzw. die Innenschimmel günstigsten Temperaturen zwecks Reifung lagert.
