Abstract
El procedimiento de preparación del alimento comprende mezclar un polvo dispersable en agua con un líquido acuoso y opcionalmente con otros ingredientes alimenticios, dicho polvo dispersable en agua comprende 30 a 100% en peso de un componente de semilla de legumbre descascarada (DPS) y 0 a 70% en peso de un material portador, donde dicho componente de DPS contiene 30 a 60% en peso de almidón gelatinizado y 15 a 35% en peso de proteína de legumbre; en donde la combinación del componente de DPS y el material portador constituye por lo menos 90% en peso del polvo; en donde el polvo dispersable en agua tiene un contenido de aceite de por lo menos 0,2% en peso; en donde por lo menos 80% en peso de las partículas contenidas en el polvo tiene un diámetro en el rango de 10 a 1000 mm; y en donde por lo menos 90% en vol. de los componentes insolubles en agua tiene un diámetro hidratado menor de 150 mm.The food preparation process comprises mixing a water dispersible powder with an aqueous liquid and optionally with other food ingredients, said water dispersible powder comprises 30 to 100% by weight of a husked legume seed component (DPS) and 0 a 70% by weight of a carrier material, wherein said DPS component contains 30 to 60% by weight of gelatinized starch and 15 to 35% by weight of legume protein; wherein the combination of the DPS component and the carrier material constitutes at least 90% by weight of the powder; wherein the water dispersible powder has an oil content of at least 0.2% by weight; wherein at least 80% by weight of the particles contained in the powder have a diameter in the range of 10 to 1000 mm; and where at least 90% in vol. of the water insoluble components has a hydrated diameter of less than 150 mm.
