Abstract
Un proceso para preparar un hidrolizado de un sustrato solido comestible. El sustrato solido comestible puede ser de origen animal o vegetal compuesto por carne animal, de pescado, de mariscos comestibles o de una planta comestible o una combinacion de los mismos. El proceso comprende la preparacion de un koji fermentado preparado de un material que contiene proteína con un carbohidrato, mezclar el koji fermentado con un sustrato solido seleccionado para formar una mezcla y la hidrolisis de la mezcla en un ambiente con un contenido de sal menor al 2%, o preferentemente con completa ausencia de sal. En otra realizacion, el koji fermentado puede ser preparado a partir de un sustrato solido comestible en si mismo. El hidrolizado preparado puede ser sometido a una etapa de fermentacion del moroni para obtener un compuesto alimentario. Por otra parte, un cultivo de la bacteria ácido-láctica puede ser inoculado a la mezcla previo a la hidrolisis, la que elimina la fermentacion del moroni y acelera el proceso. On the other hand, a culture of the lactic acid bacteria can be inoculated to the pre-hydrolysis mixture, which eliminates the fermentation of the moroni and accelerates the process. The hydrolyzate of the present invention can be used as a base for cooking or as a condiment.
