Abstract

A process to prepare a hydrolyzate of an edible solid substrate. The solid edible substrate can be of animal or vegetable origin composed of animal meat, fish, edible shellfish or an edible plant or a combination thereof. The process comprises the preparation of a fermented koji prepared from a protein-containing material with a carbohydrate, mixing the fermented koji with a solid substrate selected to form a mixture and hydrolysis of the mixture in an environment with a salt content less than 2 %, or preferably with complete absence of salt. In another embodiment, the fermented koji can be prepared from a solid edible substrate itself. The prepared hydrolyzate can be subjected to a fermentation stage of the moroni to obtain a food compound. On the other hand, a culture of the lactic acid bacteria can be inoculated to the pre-hydrolysis mixture, which eliminates the fermentation of the moroni and accelerates the process. The hydrolyzate of the present invention can be used as a base for cooking or as a condiment.
