Abstract

La presente se refiere a un método y sistema portátil para la evaluacion de la calidad de la carne, que puede ser carne de bovino, ovino, porcino, aves de corral u otra. El instrumento de la presente comprende un aparato portátil que se acerca a lasmuestras de carne a analizar y con el que se realiza una toma de imagen; posteriormente relaciona dicha imagen con parámetros de calidad de la carne, en forma objetiva, mediante un método de análisis de imágenes. La presente resuelve en formapráctica, rápida y satisfactoria la determinacion de parámetros de calidad de la carne como son la textura, el color y el porcentaje de grasa intramuscular contenido.This refers to a portable method and system for the evaluation of meat quality, which can be beef, sheep, pigs, poultry or other.
