Un procedimiento para la preparacion de un dulce de leche sin azucar agregado que comprende las etapas de: a) hidrolizar parcialmente la lactosa contenidaen la leche; b) ajustar los valores de pH, acidez y temperatura de elaboracion; c) proceder a la disolucion de polioles; d) proceder a la coccion concaramelizacion; y e) ajustar la concentracion en grados Brix. La composicion del dulce de leche sin azucar agregado obtenido con el procedimiento llevado acabo tiene entre 0% y 9% de lactosa; entre 14% y 20% de polioles; entre 10% y 24% de polidextrosa; entre 0% y 10% de maltodextrina; un máximo de 3% de lípidostotales; un máximo de 2% de cenizas; un mínimo de 4% de proteínas de leche; y un mínimo de 60% de solidos totales.A process for the preparation of an added unsweetened dulce de leche comprising the steps of: a) partially hydrolyzing the lactose contained in the milk; b) adjust the pH, acidity and processing temperature values; c) proceed to the dissolution of polyols; d) proceed with the cooking with caramelization; and e) adjust the concentration in Brix degrees.
