Abstract
A Delta 5 desaturase of fatty acid capable of catalyzing the conversion of dihomo-gamma-linolenic acid to arachidonic acid is described, characterized in that it has been encoded by an isolated nucleotide secunecy having a denucleated sequence selected from the group consisting of NO SEQ ID : 1, 13, 17, 19, 21, 22, 23, 24, 25, 26 and 27; and because it comprises an isolated polypeptide that has a polypeptide sequence selected from the group consisting of NO.
