Se describe una desaturasa de ácido graso capaz de catalizar la conversion de ácido oleico a ácido linoleico, ácido linoleico a ácido gama-linolenico oácido alfa-linolénico a ácido estearidonico, la cual ha sido codificada por una secuencia denucleo tidos seleccionada del grupo que consiste en los NO ID SEC:1, 3, 19, 21, 23, 25, 27, 28, 29, 30, 31, 32 y 33; y la cual comprende una secuencia de polipéptidos seleccionada del grupo que consiste en los NO. ID. SEC:2, 4, 5, 6, 7, 8, 9, 10,11, 20, 22 , 24, 26,34, 35, 36, 37, 38, 39, 4O y una secuencia de polipéptidos que comprende los residuos de aminoácidos 50-53, 39-43,172-176, 204-213 y 390-402 del NO. ID. The use of a host cell that expresses stearidonic acid desaturase in a mouse-grown culture is also described; the use of a host cell expressing fatty acid desaturase in a method intended for the production of linoleic acid in a host cell culture; an isolated nucleic acid which encodes the acid fatty acid desaturase, the use of the host cell in a method intended to obtain the altered biosynthesis of the long chain polyunsaturated fatty acid; an oil or a fraction thereof has been produced according to this last method;
