En la figura 1 se encuentran tres elementos que conforman la base del método: mediciones sobre cada animal de al menos cuatro características: peso, altura, edad y complexión, concentrados en una base de datos para la generación de una matriz de características con la cual se determinan las curvas de ganancia de peso. La aplicación del modelo, incluyendo la información de precios de comercialización, determina el momento del sacrificio, teniendo como objetivo la ganancia máxima. En la figura 5 se encuentra el diagrama de flujo de los elementos involucrados en el método de la presente propuesta. A partir de las mediciones realizadas a los animales se estima la proporción de carne comercializable por medio de un modelo predictivo; es decir, no se considera hueso, grasa o piel. De acuerdo al historial de precios de comercialización se determina el momento apropiado de venta y aunado a las estimaciones del modelo se realiza un análisis de costo-beneficio para la toma de decisión del sacrificio del animal.  Figure 4 shows the basic sequence of the method, from the weight gain curves an estimate of the marketable proportion of meat is obtained by applying a model that relates both variables.
