Abstract

The present invention provides a machine for frying meats, which includes as main parts a hexahedral frying chamber, a gas supplying system, a heat concentration system, an oil recirculation system, a sliding system, one or more meat containing baskets, a temperature sensing system and a timer, gas flow and injection and oil recirculation.

State of the art In the Latin American food industry there is a very widespread diet based on fried meats, such as the classic "pork carnitas". This type of food is commonly prepared by frying the meats in a type of metal saucepan. However, the use of this type of utensils means that there is no heterogeneous control of the frying process. The staff that prepares this type of utensils must be handling the meat inside the saucepan using a kind of wooden shovel. The staff moves the meat using circular and undulating movements. This technique involves a tremendous physical exhaustion on the part of the personnel, as well as an exposure on the part of the meat to infectious organisms contained in the personnel. This technique also has the disadvantage of a large expenditure of heat energy for so long frying. These disadvantages cause the need for new machines or frying devices, especially when using large pieces of meat to be fried.
There are a multitude of options in the state of the art that have tried to solve the problem of food frying. However, there is no history regarding frying machines applied to large pieces of meat.

Although large pieces of meat can be cooked, the time of frying will be very long and with a high cost of calorific energy, because it does not have a system of undulating and / or circular movement which is recommended for frying large pieces of meat.
Patent US6363840B1 shows a food frying machine, which consists of a frying chamber and an oil recycling system controlled by a valve system. It should be noted that this oil recycling system does not have a duct that returns it to the inside of the frying chamber. Although this machine can be used to fry large pieces of meat, it will require a long time, as well as a large expenditure of heat energy.

Additionally, the cost of the machine is lifted due to the multitude of connecting pieces of the waste collection container system. It should be noted that the floor of the base of the chamber is smooth and does not contain an angle of inclination with respect to the horizontal. It also has the disadvantage that the frying system is based on electrical energy which translates into a long period of frying.
As it has been observed, there is a number of food frying machines. However, these machines can not be applied to the frying of meat in large pieces because they need in prolonged contact with the frying oil. Therefore, it is necessary to develop new machines that have the peculiarity of frying large pieces of meat and with a significant saving of heat energy.
In this regard, the present invention provides a frying machine for large pieces of meat which overcomes the disadvantages described above. This machine has the advantage of being able to fry massive quantities in large pieces of meat; as well as frying in a homogeneous way and with a great saving in calorific energy, which results in a reduction of frying time.

Detailed description of the invention The present invention provides a meat fryer machine for feeding. This machine basically consists of the following systems: a) a hexahedral frying chamber, b) a gas supply system, c) a heating concentration system, d) an oil recirculation system, e) a sliding system, f) one or more meat holding baskets, g) a temperature sensing system, and h) an automated time control, flow and gas injection and oil recirculation.
The frying chamber is of hexagical shape without the upper face (1, figures 1 and 2) and each of the faces of the frying chamber is composed of two sheets of stainless steel that cover a fiberglass sheet (18, figure 4).
The frying chamber contains in its upper part a cover system (15, figure 4) consisting of a stainless steel sheet which is attached to the frying chamber through a longitudinal system of hinges (16, figure 4): Additionally, the lid contains a pull system (17, figure 4) located on the outer face of said lid.
The gas supply system is a flute type consisting of a metallic cylindrical structure with a series of holes located in the longitudinal direction of the cylinder (2, figures 1 and 2). This cylindrical structure is located in the lower internal part of the frying chamber (1, figures 1 and 2) in the longitudinal direction thereof and close to the front face of the frying chamber. On the other hand, the cylindrical structure is connected by one of its ends to a gas supply system.
For its part, the heating concentration system consists of a series of stainless steel sheets joined in such a way as to form a zic-zac type structure (3, figures 1 and 2). Said zic-zac-shaped structure has a tilt angle selected from the range of -1 to -60 0 with respect to the horizontal.
In turn, the oil recirculation system consists of a system of stainless steel ducts controlled by a pump (4, figure 1 and 2). The entrance to the duct system is located in the lower part of the frying chamber and the outlet of the duct system is located on the upper internal face of the frying chamber. This outlet is through an internal duct (8, figure 2) that is connected to an oil filter (19, figures 2 and 4) located on the back face of the frying chamber. The system is controlled through an electrical wiring system connected in turn to an automated control.
On the other hand, the sliding system consists of four or more metallic rims placed strategically at the base of the frying chamber (5, figures 1, 2 and 3).
The meat holding baskets (Figure 3) consist of a hexahedral structure (13, Figure 3) where their faces are made of stainless steel mesh and is attached to a metallic structure connected to a frame in a vertical direction ( 14, figure 3). Said frame contains at its opposite end to the junction a cylindrical structure that has the function of serving as a handle so that the user can slide the baskets out of the frying chamber.
The temperature sensor system consists of a temperature sector (12, figure 2) is which is located on one of the side faces of the frying chamber. Said sensor is connected to the automated control by means of an electrical wiring system. For its part, the automated control is also connected by a system of electrical wiring to a device based on valves that control the entry of gas into the gas supply system.
Finally, it should be understood that the present invention can result in multiple modifications in terms of design, use of materials, dimensions and variants of gas injection mechanisms, heating concentration, and oil recirculation. The preferred material for the construction of the machine is stainless steel. In this regard, all such modifications should be understood as within the scope of the present invention.

Chapter Claims A meat fryer machine, characterized in that it comprises: i) a hexahedral frying chamber, ii) a gas supply system, iii) a heating concentration system, iv) an oil recirculation system, sliding, vi) one or more baskets containing meat, and vii) a temperature sensing system; where the frying chamber is of hexahedral shape without the upper face; wherein each of the faces of the frying chamber is composed of two sheets of stainless steel that cover a sheet of fiberglass; wherein the gas feeding system is a flute type consisting of a metallic cylindrical structure with a series of holes located in the longitudinal direction of the cylinder, located in the lower internal part of the frying chamber in the longitudinal direction thereof and close to the front face of the frying chamber; wherein the cylindrical structure is connected by one of its ends to a gas supply system; wherein the heating concentration system consists of a series of stainless steel sheets joined in such a way as to form a zic-zac type structure; wherein the heating concentration system has an angle of inclination selected from the range of -1 to -60 ° with respect to the horizontal; wherein the gas recirculation system consists of a system of stainless steel pipelines controlled by a pump; where the entrance to the duct system is located in the lower part of the frying chamber and where the outlet of the duct system is located in the upper internal face of the frying chamber connected in turn with an oil filter arranged on the outside of the chamber; wherein the gas recirculation system is controlled through an electrical wiring system by an automated control; wherein the sliding system consists of four or more metallic rims placed strategically at the base of the frying chamber; wherein the meat holding baskets consist of a hexahedral structure where their faces are made of stainless steel mesh and where said hexahedral structure is joined in its interior to a metal structure connected to a frame in vertical direction and where said frame contains at its opposite end to that of union a cylindrical structure; wherein the temperature sensing system consists of a temperature sector placed on one of the side faces of the frying chamber and wherein one end of said sensor is connected to the automated control by means of an electrical wiring system; wherein said automated control is also connected by a system of electrical wiring to a device based on valves that control the entry of gas into the gas supply system; wherein the frying chamber contains in its upper part a cover system consisting of a stainless steel sheet which is attached to the frying chamber through a longitudinal system of hinges and where said cover contains a pull system located in the outer face of said lid.
