Abstract

PURPOSE: To obtain cornflakes having improved taste and color, by pressurizing and roasting corn without adding a carmelizing component to it.
CONSTITUTION: Ingredients not to be carmelized, e.g., salt, emulsifying agent, etc. are added to ordinary corn granules, which are blended with 2W20wt% based on raw material of water, boiled at 1.8W4.0kg/cm2 for 5W50min, and passed through rolls at 30W40°C so that the granules are made into flat materials with a thickness of 0.5W1.5mm. The materials are dried to a water content 8W12wt%, roasted at 250W350°C for 20W150sec so that they are expanded, and the materials are covered with a seasoning.
