Abstract

PURPOSE: Dried "kajime" (Ecklonia cava Kjelman) is exposed to cold water to elute the bitter and astringent components in "kajime" and the cold water is exchanged appropriately to produce the product having good taste as a suitable food.
CONSTITUTION: In order to make "kajime" edible, which has strong bitterness and astringency because it contains iodine and tannin, it is dried and exposed to cold water for about 20hrs to elute the bitter and astringent components wherein the cold water containing both components are intermittently or continuously exhanged. The "kajime" free from bitterness and astringency is boiled preferably in a pressurized pot to produce the softened and edible "kajime".
