Abstract
PURPOSE: Starch and/or grain flour are controlled in moisture content to a specific level and forced through die orifices at a specific temperature and pressure to produce said starch and/or grain flour with low bulk specific gravity and high oil absorbability.
CONSTITUTION: Starch and/or grain flour are, when necessary, combined with 0.1W5.0wt% of a lubricant, e.g., glycerol fatty acid ester, animal or vegetable fat or oil, and controlled in moisture content with water or steam to 15W20%. Then, they are forced through die orifices at a temperature of 180W250°C and a pressure of 10W30kg/cm2, when necessary, the extrudate is cut in an appropriate length, dried to a water content of less than 10% and crushed into a powder.
