Abstract

The heating of wort, e.g. at the mashing and hopping stages, is carried out electrically by induction heating. The wort is exposed to a high frequency electrostatic field having a frequency between 300 kilocycles per second and 3000 megacycles per second, and an applied voltage which may be as high as 10,000 volts; the electrodes may be either within or outside a non-conducting receptacle through which the wort is passed. The uniformity of the heating throughout the bulk of the wort prevents fouling of the heating equipment. Examples are given. Reference is made in the Provisional Specifications to heating wort by applying a low voltage direct current either to the wort direct or to the wall of the heating equipment. The electrical heating may be employed to heat quiescent plugs of mash as described in Specifications 903,990, 934,143 and 940,348.
