Abstract

904,371. Dielectric heating of dough. ATELIERS DE CONSTRUCTION GUILLAUME OOMS S.A. April 2, 1959 [April 2, 1958], No. 11222/59. Class 39 (3). [Also in Group VI] Dough is formed into articles which are passed through a conditioning chamber and then fermented and baked in contact with, directly or through a conducting member such as a mould, the electrodes of a high-frequency generator after which the articles are exposed to heat to form a crust. The moulds may be simple or multiple, Fig. 3, and have cylindrical conductive edges 40, 41 to engage over the electrodes. In a modification, Fig. 6, the dough 56 is displaced in a trough whose base 57 is an endless conveyer belt and whose side walls 58, 59 constitute the electrodes of a highfrequency generator.
