Abstract
543,720. Conditioning cereal grain. SIMON, Ltd., H., WATTS, G., and DINSDALE, J. W. Oct. 31, 1940, No. 15950. [Class 58] In order to toughen the gluten of wheat berries without overheating the surface layers of the berries they are subjected to the direct action of steam at atmospheric pressure, the application of the steam being so regulated that the temperature of the outer layers reaches between ]40‹F. and 155‹F. in a period varying from 2 to 10 minutes according to the nature of the wheat. The said period may be determined for any given kind of wheat by testing a dough made from flour obtained by milling the wheat, the test being made in a machine such as the "Brabender Extensograph". The wheat may be passed through a casing b by a worm a, steam being injected into the casing through nozzles c under the control of thermostats f. The wheat is discharged on to a revolving plate e<SP>1</SP> and cooled by aspiration in the apparatus g. Specification 527,047 is referred to.
