3261. Guignard, G. P. Feb. 7. Glycerine, obtaining.-Glycerine is produced during the fermentation of natural must with the mannitic ferment. The fermented must is evaporated to dryness, and is washed with cold alcohol saturated with mannite, the glycerine being then extracted together with the malates and certain nitrogenous substances, the mannite and various salts of organic acids being left in the residue.
