Abstract

Dry beverage mix for use in making a milk based drink comprises a readily soluble substrate incorporated with carboxymethyl cellulose which on dispersing in an aq. soln. is readily solubilised. The mix also contains an edible acid, pref. using citric acid or >=1 of malic-, fumaric-, lactic-, or adipic acid. The acid is present in an amt. sufficient to bring the pH to 5 and the substrate can be sucrose. The sucrose is incorporated with the carboxy methyl cellulose by mixing it with water sufficient to effect adhesion between the two constituents and then mixing in the cellulose. The mix can also incorporate milk solids which can be used alternatively as the substrate.
