Abstract

Procedimiento y dispositivo para la clasificación de quesos, mediante ultrasonidos. El procedimiento reivindicado permite clasificar los quesos por lotes de madurez homogénea, representado por características físicas, (humedad, textura) que inciden en la velocidad de propagación de ultrasonidos a través de una muestra o pieza (2) del queso a clasificar. El dispositivo para la puesta en práctica del procedimiento comprende: Un medidor de precisión (1) del espesor de la muestra o pieza (2), colocada entre un emisor (3) y un receptor (4) de ultrasonidos; Un dispositivo (6) que digitaliza la señal y la transmite al ordenador (5); Un generador-receptor de pulsos (7) que los proporciona al emisor (3) y recibe la señal del receptor (4); Un ordenador (5), que calcula la velocidad de propagación de los ultrasonidos y la expresa en grado de madurez. **FIGURA**
