Abstract

The electrohydraulic winepress is a large container with its four walls totally covered with grilles for filtering the must and with orifices in its bases for the discharge and collection of the must, in such a manner that as it is being filled with grapes it is filtering by means of its own weight and therefore the must is discharged without even having been pressed and is therefore totally top quality. Next, the cover or press is actuated by means of a hydraulic system and therefore the mass is neither subjected to friction nor stirred. Nor is the must aerated, since it is sealed hermetically and the grapes are always in contact with stainless steel, resulting in maximum hygiene. Once pressing has taken place, the front wall is raised and the floor lifted, expelling the residual mass to the outside, returning to its initial position in order to recommence the process.
