Gefüllte Pralinen, Dessertstangen usw. stellt man bis jetzt im allgemeinen in der Weise her, daß man flüssige Kuvertüre in feste Formen gießt, diese umstülpt und die Hauptmasse wieder ausschüttet, damit nur die Formwandungen mit Kuvertüre bedeckt sind. Die Hohlräume füllt man mit Creme oder anderen Füllungen, deckelt das Ganze zu und entleert die Formen. Diese Arbeiten erfolgen entweder mit der Hand oder maschinell. Oder aber man gießt feste Fondantkerne und überzieht sie mit Schokolade durch Eintauchen oder mittels einer Überziehmaschine. Zum Schluß wird, wenn gewünscht, jedes einzelne Stück in Zinn- oder Aluminiumfolie gewickelt. Im allgemeinen geschieht dies bisher mit der Hand, doch gibt es seit neuerer Zeit hierzu auch kleine Einwickelmaschinen.
