Abstract
The invention provides meat particles, a wet pet food containing the meat particles and a preparation method of the wet pet food. The meat particles comprise the following raw materials in percentage by weight: 94-98% of low functional protein substance and 2-6% of curdlan; or 47-49% of high-functional protein substance, 47-49% of protein isolate and 2-6% of curdlan. The curdlan is added into the meat particles, so that the defect that low-functional protein does not have the capability of forming a solid structure is overcome, the cost is low, healthy protein can be provided for pets, the nutrition balance of the pets is guaranteed, the prepared wet pet food can be conveniently transported, the meat particles cannot be damaged in the transportation process, the shelf life of the product is prolonged, and the ideal aesthetic feeling is achieved.
Description
Technical Field
The invention relates to the technical field of food processing, in particular to meat particles, wet pet food containing the meat particles and a preparation method of the wet pet food.
Background
At present, raw meat is mainly used in pet wet food formulas in the market, so most of protein sources contained in the pet wet food are animal protein, and the pet wet food has high functionality. The pet food taking the high-functional protein as the main body has compact texture and certain hardness, and is convenient to produce and store.
The high-functional protein source is mainly poultry animals, and the price cost is higher than that of the low-functional protein due to the problems of raw material transportation and the like in the later period of early feeding; high functional protein raw material processing is also more complex than low functional protein (vegetable protein) in the product production process, increasing equipment and labor costs and reducing production efficiency. With the improvement of living standard of people, not only the health problem of the pet is considered, but also the nutrition balance health problem of the pet is concerned by people, and the problems of obesity, high fat content and the like can be caused by eating the wet pet food with high meat content. The low-functional protein source mainly comprises plants and animal byproducts, and has low fat content and low price cost. However, the low-functional protein has no capability of forming solid structure, and the high-content low-functional protein can form structure, but the structure is soft and rotten, is not beautiful, is inconvenient to transport and has poor palatability.
Curdlan is a hydrophilic colloid. Its heat irreversible property makes it stable after autoclaving without destroying its texture. By its properties, it can be combined with low-functional protein, and can obtain the same texture as high-functional protein, and its stability after high-pressure sterilization can be raised, so that it can not be substituted by other hydrophilic colloid. The invention aims to provide meat particles and wet pet food containing curdlan and having the capability of forming solid structures.

Aiming at the defects of the prior art, the invention provides meat particles, wet pet food containing the meat particles and a preparation method of the wet pet food.

The second aspect of the present invention is a method for producing the above meat particles, comprising the steps of:
step one, cooking the low-functional protein substance at high temperature, and then freezing;
secondly, chopping and mixing the frozen low-functional protein substance at a low speed in a chopper mixer, and then chopping and mixing at a high speed until the substance is twisted into thick and uniform slurry;
mixing the low-functional protein substance slurry and the curdlan according to a proportion, firstly stirring at a low speed, and then stirring at a high speed until the slurry is uniformly mixed;
and step four, extruding the slurry uniformly mixed in the step three into strips, putting the strips into a cooking box for cooking, and then cutting the strips into meat particles.
Further, the freezing in the first step is freezing in a freezing refrigerator at-18 ℃ for 24 hours.
Further, the height of the meat particles was 6 mm.
In a third aspect of the present invention, there is provided a method for preparing the above meat particles, comprising the steps of:
adding emulsified protein isolate and water into a chopping and mixing machine according to a proportion, and uniformly mixing to prepare protein isolate paste;
mixing the separated protein paste, the high-function protein substance and the curdlan according to a proportion, firstly stirring at a low speed, and then stirring at a high speed until the slurry is fully mixed;
and step three, extruding the uniformly mixed slurry into strips, putting the strips into a cooking box for cooking, and then cutting the strips into meat particles.
Further, the height of the meat particles was 6 mm.
The invention provides a wet pet food containing the meat particles, and the preparation method comprises the following steps:
preparing a guar gum solution;
and step two, mixing the meat particles and the guar gum solution according to a ratio, bagging, sealing and sterilizing.
Further, the concentration of the guar gum liquid is 0.5-2%.
Further, the mass ratio of the meat particles to the guar gum solution is 40: 60.
By adopting the technical scheme, compared with the prior art, the invention has the following technical effects:

Detailed Description
The invention provides meat particles, wet pet food containing the meat particles and a preparation method of the wet pet food.
On one hand, the meat particles comprise the following raw materials in percentage by weight: 94-98% of low functional protein substance and 2-6% of curdlan.
In a preferred embodiment, the meat particles comprise the following raw materials in percentage by weight: 94-98% of chicken liver and 2-6% of curdlan.
Further, the preparation method of the meat particles comprises the following steps:
step one, steaming the chicken liver at high temperature, and then freezing;
chopping and mixing the frozen chicken livers at low speed in a chopper mixer, and then chopping and mixing at high speed until the chicken livers are twisted into thick and uniform slurry;
step three, mixing the chicken liver slurry and the curdlan according to a proportion, firstly stirring at a low speed, and then stirring at a high speed until the slurry is uniformly mixed;
and step four, extruding the slurry uniformly mixed in the step three into strips, putting the strips into a cooking box for cooking, and then cutting the strips into meat particles.
Further, the freezing in the first step is freezing in a freezing refrigerator at-18 ℃ for 24 hours.

In a third aspect, the preparation method of the wet pet food containing the meat particles comprises the following steps:
preparing a guar gum solution;
and step two, mixing the meat particles and the guar gum solution according to a ratio, bagging, sealing and sterilizing.
Further, the concentration of the guar gum liquid is 0.5-2%.
Further, the mass ratio of the meat particles to the guar gum solution is 40: 60.
The present invention will be described in detail and specifically with reference to the following examples to facilitate better understanding of the present invention, but the following examples do not limit the scope of the present invention.
The materials used in the following examples include: chicken by-product (chicken liver), chicken breast, curdlan, protein isolate and water.
The list of equipment employed is as follows: a cutting and mixing machine, a stirring machine, a 7mm nozzle, a plastic bag for cakes, a cooking box, 100 g of self-sealing bags, a bag sealing machine and an autoclave.
Example 1
Referring to fig. 1, the present embodiment provides three preferred meat particles and a pet food containing the same, including the raw materials and the mass percentages thereof as shown in table 1 below.

The preparation method of the wet pet food comprises the following steps:
(1) steaming chicken liver at 100 deg.C for 5 min, and freezing in-18 deg.C refrigerator for 24 hr.
(2) Chopping the frozen chicken liver in a chopper mixer at a low speed for 2 minutes and at a high speed for 4 minutes until the chicken liver is twisted into thick and uniform slurry, and storing the slurry at 4 ℃.
(3) Mixing chicken liver serous fluid and curdlan according to a certain proportion (each formula prepares a batch of 2 kg), then placing into a stirrer, firstly stirring at low speed for 2 minutes, and then stirring at high speed for 2 minutes until the slurry is uniformly mixed
(4) Extruding the evenly mixed slurry into strips, putting the strips into a cooking box, cooking for 5 minutes, and cutting the strips into meat particles with the height of 6 mm.
(5) Guar gum solution with the concentration of 1% is prepared.
(6) The meat particles were placed in a self-sealing bag and then filled with 1% guar gum solution. The ratio of the meat particles to the glue solution is 40: 60. the bags were then sealed with a bag sealer and sterilized in an autoclave.
Example 2
The three preferred meat particles and the wet pet food containing the meat particles comprise the raw materials and the mass percentage of the raw materials are shown in the following table 2.

The preparation method of the wet pet food comprises the following steps:
(1) adding emulsified protein isolate and water into a chopper mixer according to the proportion of 1:8, mixing uniformly, storing the prepared protein isolate paste in a refrigerator at 4 ℃, and taking out when in use.
(2) Mixing the protein paste, the chicken and the curdlan according to a certain proportion (each formula prepares a batch of 2 kg), then placing the mixture in a stirrer, stirring at a low speed for 1 minute, and then stirring at a high speed for 2 minutes to fully mix the slurry
(3) Extruding the evenly mixed slurry into strips, putting the strips into a cooking box, cooking for 5 minutes, and cutting the strips into meat particles with the height of 6 mm.
(4) Guar gum solution with the concentration of 1% is prepared.
(5) The meat particles were placed in a self-sealing bag and then filled with 1% guar gum solution. The ratio of the meat particles to the glue solution is 40: 60. the bags were then sealed with a bag sealer and sterilized in an autoclave.
Verification examples
The firmness of the meat pieces was measured using a TA-TX2i texture profiler and texture index 32 software. And (3) setting parameters of a quality purchase instrument:
probe P5 (0.5 cm diameter);
Pre-test speed:250mm/min;
Test-speed:250mm/min;
After-speed:250mm/min;
Distance:6mm;
Trigger force:5g;
the peak value of the force (0.2) occurring during compression represents the hardness (g) of the meat mass. The measurements were performed on 10 randomly selected pieces per production lot and the average of the hardness values was determined.
(1) The test results of example 1 are shown in table 3, wherein the formulation of the comparative example was 100% chicken liver + 0%.

The embodiments of the present invention have been described in detail, but the embodiments are merely examples, and the present invention is not limited to the embodiments described above. Claims (10)
1. The meat particles are characterized by comprising the following raw materials in percentage by weight: 94-98% of low functional protein substance and 2-6% of curdlan; or the like, or, alternatively,
47-49% of high-functional protein substance, 47-49% of protein isolate and 2-6% of curdlan.
2. The meat particle of claim 1, comprising the following raw materials in weight percent: 94-98% of chicken liver and 2-6% of curdlan; or the like, or, alternatively,
47-49% of chicken, 47-49% of protein isolate and 2-6% of curdlan.
3. The method of preparing meat particles according to claim 1, comprising the steps of:
step one, cooking the low-functional protein substance at high temperature, and then freezing;
secondly, chopping and mixing the frozen low-functional protein substance at a low speed in a chopper mixer, and then chopping and mixing at a high speed until the substance is twisted into thick and uniform slurry;
mixing the low-functional protein substance slurry and the curdlan according to a ratio, firstly stirring at a low speed, and then stirring at a high speed until the slurry is uniformly mixed;
and step four, extruding the slurry uniformly mixed in the step three into long strips, putting the long strips into a cooking box for cooking, and then cutting the long strips into meat particles.
4. The method for preparing meat particles according to claim 3, wherein the freezing in the first step is performed in a freezing refrigerator at-18 ℃ for 24 hours.
5. A process for the preparation of meat particles according to claim 3 wherein the height of the meat particles is 6 mm.
6. The method of preparing meat particles according to claim 1, comprising the steps of:
step one, adding the emulsified protein isolate and water into a chopper mixer according to a proportion, and uniformly mixing to prepare a protein isolate paste;
mixing the separated protein paste, the high-function protein substance and the curdlan according to a ratio, firstly stirring at a low speed, and then stirring at a high speed until the slurry is fully mixed;
and step three, extruding the uniformly mixed slurry into strips, putting the strips into a cooking box for cooking, and then cutting the strips into meat particles.
7. The method of claim 6, wherein the meat particles have a height of 6 mm.
8. A wet pet food containing meat particles according to any one of claims 1-2, comprising the steps of:
preparing a guar gum solution;
and step two, mixing the meat particles and the guar gum solution according to a ratio, bagging, sealing and sterilizing.
9. The pet wet food according to claim 8, wherein the concentration of the guar gum solution is 0.5-2%.
10. The pet wet food of claim 8, wherein the mass ratio of the meat particles to the guar gum solution is 40: 60.
