Verfahren und Einrichtung zum Rösten und Mahlen, insbesondere von Kaffeebohnen Für die genussfertige Zubereitung der rohen Kaffeebohnen werden diese zuerst ge röstet, und hierauf gemahlen, also zwei ganz verschiedenen Prozessen unterworfen. Dabei ist es aus wirtschaftlichen Gründen üblich, ein grösseres Quantum auf einmal zu rösten und dieses in Vorrat. zu halten. Von diesem Quantum werden dann in der Regel kleinere Mengen für die unmittelbare oder baldige Zubereitung des Getränkes gemahlen. Die Erfahrung zeigt, dass die Güte des Kaffees bezüglich Geschmack am besten ist, wenn Rösten, Mahlen und Getränkezubereitung in möglichst. kleinen Zeitabständen erfolgen.
Aus wirtsehaftlichen Gründen kann dies in der Praxis nur bei laufend grossem Kaffeev er brauch in befriedigender Weise erreicht wer den. Bei kleinerem Verbrauch z. B. im Haus halt oder in kleineren Wirtschaftsbetrieben war es bisher unerlässlich, einen gewissen Vor rat an geröstetem Kaffee zu halten und hie von die jeweils für eine Getränkezubereitung benötigte Menge dem Vorrat zu entnehmen und für sieh zu-mahlen. In vielen Fällen ist. auch dies bereits zu umständlich, und es werden auch Vorräte an gemahlenem Kaffee gehalten, was nur auf Kosten des Aromas mög-lieb ist.
Vorliegendes Verfahren und die hiefür vorgesehenen Einrichtungen beseitigen diese Nachteile.
Das Verfahren betrifft, das Rösten und das Mahlen von Kaffeebohnen. Das Verfahren besteht darin, dass für ein bestimmtes Quan- tum Kaffeebohnen der Röstprozess und der Mahlprozess unter dauerndem Verschluss im gleichen Gerät erfolgt, und dass der Mahl prozess dem Röstprozess unmittelbar folgt.
Gemäss dein Verfahren wird ein begrenztes Quantum Kaffeebohnen unter Verschluss ge röstet und gemahlen. Durch die unmittelbare Aufeinanderfolge der beiden Prozesse wird ein Minimum an Geschmackeinbusse erreicht. Das Verfahren ermöglicht somit die beste Art der Herstellung von Kaffee, indem die Bohnen zeitlich unmittelbar nacheinander geröstet und gemahlen werden, worauf das Kaffeepulver sofort mit. dem heissen Nasser übergossen wer den kann. Vor allem fällt das bisher oft sehr mühselige Rösten in einer Pfanne auf dem Elektroherd dahin. Der Verlust an ätherischen Ölen, also an Aroma, ist auf. ein Minimum reduziert.
Es lassen sich vor allem auch kleinste Mengen Kaffee wirtschaftlich rösten und mahlen, weshalb das Verfahren besonders für den Kleinverbrauch in Haushaltungen und in kleineren Wirtschaftsbetrieben geeignet ist.
Diese Einrichtung besteht, darin, dass in einer obern Zone ein Röstraum und in diesem ein Rührwerk und in einer untern Zone ein Mahlwerk vorgesehen ist, und dass der An trieb des Rührwerkes und des Mahlwerkes mit tels einer gemeinsamen, durch ein Motor an getriebene vertikale Welle erfolgt, und dass Mittel zur Beförderung des Gutes aus dem Röstraum in den Mahlraum derart vorge sehen sind, dass bei geschlossener Einrichtung auf das Rösten des Gutes das Mahlen unmittel bar folgt.
Die Einrichtung besteht somit im wesent lichen aus einem Röstraum und einem darin eingebauten Rührwerk. Ferner ist eine darun ter liegende Mahlvorrichtung vorhanden. Das Rührwerk und das Mahlwerk werden durch eine vertikale Achse angetrieben. Ohne Öff nen der Einrichtung kann nach beendigtem Rösten das Röstgut aus dem Röstraum in das Mahlwerk abgelassen werden.
Die Erfindung wird an Hand von Aus führungsbeispielen näher erläutert.
In der Einrichtung gemäss Fig.1 ist in einer obern Zone 0 das Rührwerk 3 und in einer untern Zone U das Mahlwerk lcu + 1b vorhanden. Das Rührwerk ist in einen Röst- becher 4 eingebaute und letzteres ist von einem wärmeisolierenden Mantel 15 umgeben. Durch einen obern aufsetzbaren Teil 7 mit einem ebenfalls wärmeisolierenden Mantel, der Ab luftöffnungen 18 enthält, wird ein geschlos sener Röstraum 5 gebildet.. In diesem Raum befindet sich die als Wärmestrahler wirkende Infrarotlampe 2.
Dieser Strahler erhitzt die darunter dem Rösten ausgesetzten und in wir belnde Bewegung versetzten Kaffeebohnen (nicht gezeichnet). Unmittelbar über dem ge wölbten Bodenteil 4a des Röstbechers 4 be findet sieh der drehende Flügel 3 des Rühr werkes, angeordnet auf der vertikalen Welle B. Diese Welle ist in Lagern 9a und 9b gelagert. Auf der Welle 8 sitzt ausserdem der rotierende innere Teil la des Mahlwerkes, zentrisch ge halten im festen äussern Teil 1b. . Die Mahl werkteile la und 1b sind von bekannter Bau art mit einem nach unten sich verengendem Mahlraum 6. Der Mahlraum steht nach oben durch eine zentrische Bodenöffnung 4b mit.
dem Röstraum in Verbindung. Diese Boden öffnung ist gerade so gross, dass nur eine Lage Bohnen Platz findet. Während des Röst- vorganges läuft das Mahlwerk rückwärts und hebt diese Bohnen immer wieder in den Röst- raum zurück, so dass sie, unter die andern gemischt., den gleichen Röstgrad wie diese er reichen. Der Antrieb der vertikalen Welle er folgt durch den elektrischen Antriebsmotor 10 über ein Vorgelege, bestehend aus der Schnecke 11 auf der Motorwelle und dem Schnecken rad 12 auf der vertikalen Welle B. Unter dem Mahlwerk befindet. sieh die Austrittsrinne 16 für den Ablauf des gemahlenen Kaffees.
Von wesentlicher Bedeutung ist dabei die Form des Rührflügels 3, welcher in der Fig. 2 von oben gesehen dargestellt ist, sowie dessen Drehrichtung. Der Flügel 3 hat die Form eines langgezogenen<B>S.</B> Zur Ausführung einer Rührbewegung wird der Flügel in der +- Richtung angetrieben. Die S-förmige Flügel fläche bewirkt, dass das Röstgut auf der ge wölbten Röstfläche 4a. stets nach aussen ge schleudert und durcheinander gewirbelt wird.
Um die Bewegung der Kaffeebohnen nach oben zu begrenzen, kann der Röstraum durch einen zN#linderförmigen Einsatz 13, dessen Bo den aus einem Drahtgitter 14 besteht, nach oben abgeschlossen werden. Bei Umkehr der Drehrichtung (-) des Flügels hört die bisher ständig nach aussen gerichtete Wirbelbewe gung auf. Das Röstgut wird durch eine nach innen gerichtete Wischbewegung gegen die Öffnung 4b gedrängt und vom Mahlwerk er fasst.
Für die Drehriehtungsumkehr ist ein Schalter 17 vorgesehen, der eine entsprechende Umpolung am Motor in bekannter Weise vor nimmt und der gleichzeitig auch als Ein- und Ausschalter dient. Auch die Heizspirale des Strahlers 2 ist zweckmässig in den Schalter stromkreis einbezogen, so dass sie nur während der Rührbewegung in Tätigkeit ist.
Die Wirkungsweise der Einrichtung ist. fol gende. Nach Abheben des Oberteils 7, in welchem der Strahler \? befestigt ist, wird der zu mahlende Rohkaffee in den Röstraum 5 gebracht und der Oberteil 7 aufgesetzt. Hier auf werden der Strahler 2 und der Motor 10 in der +-Richtung durch die gleiche Schalter bewegung eingeschaltet. Dadurch werden die Bohnen durch den Flügel 3 im Röstraum herumgewirbelt. Durch die Wärmestrahlung der Lampe \? werden die Bohnen bei etwa 5 bis 10 Minuten Einwirkungszeit geröstet.
Nach beendigtem Röstprozess wird durch Um- legen des Schalters 17 die Drehrichtung um gekehrt; dadurch hört die nach aussen gerich tete Wirbelbewegung auf, und die Bohnen werden. gegen das Zentrum geschoben, so da.ss sie in das Mahlwerk lca -f- 1b fallen. Der ge mahlene Kaffee läuft durch die Rinne 16 ab und kann sofort verwendet werden.
.1e nach dem verwendeten Mahlwerk kann eventuell die Bodenöffnung 4b zu gross sein, einzelne Kaffeebohnen könnten während des Röstvorganges im Mahlwerk zurückbleiben, wodurch diese nicht richtig, das heisst zum Teil zu stark, zum Teil zu schwach geröstet. würden. Uni dem vorzubeugen, können, wie in Fig. 3 und 4 dargestellt, zwei von aussen be- dienbare Schieber 19a. und 19b vorgesehen wer den, durch die die Bodenöffnung 4a während des Röstvorganges abgeschlossen werden kann.
Zur Einleitung des Mahlvorganges werden die beiden Schieber nach aussen bewegt, wodurch die Kaffeebohnen, wie vorher beschrieben, in das Mahlwerk gewischt werden.
In Fig. 5 ist eine weitere Ausführung ge zeigt. Sie unterscheidet sich in der Art. des Mahlwerkes und in der Art der Mittel, um bei Umkehr der Drehrichtung den Ablauf der Kaffeebohnen aus dem Röstraum in das Mahl werk zu bewirken. Das Mahlwerk besteht dabei aus in bekannter Weise übereinander liegenden Mahlringen 1b als fester Teil und 1a als drehender Teil. Der feste Ring 1b ist im Boden des den Röstraum 5 begrenzenden, im untern Teil konischen Blechmantels 4 angeord net. Der untere Ring 1a sitzt auf der Dreh achse 3.
Auf der Drehachse ist die konische, radförmige Röstunterlage 3 mit den radialen Rippen 3a und der Schraubenmutter 21 über ein steiles Gewinde 20 auf der Drehachse angeordnet. Auf dem Gewinde 20 der Dreh achse 3 sind Anschläge 22 und 23 angeordnet.. Dureli eine relative Drehung der Achse gegen über der Röstunterlage wird diese nach unten oder nach oben bewegt und dabei durch die Anschläge in der Bewegung begrenzt. Der Rand 3b der Röstunterlage erhält dadurch einen engen oder weiten Abstand gegenüber der Röstraumverkleidung 4. Der enge Abstand ist so gewählt, dass einerseits ein Schleifen der Röstunterlage vermieden, aber anderseits ein Durchschlüpfen der Bohnen verhindert wird.
Der weite Abstand ist so gewählt, dass die Bohnen durch die Wirbelbewegung über den Rand 3a hinausgeschleudert werden und beim Zurückfallen dem Blech 4 entlang unter die rotierende Röstunterlage gelangen.
Der übrige Aufbau entspricht im wesent lichen weitgehend dem in Fig. 1 dargestellten. Für Ablauf und Entnahme des gemahlenen Kaffees dienen der Führungskanal 16 und das Gefäss 24. Der Antrieb der Drehachse erfolgt direkt durch den auf ihr sitzenden Motor 10. Die Steigung des Gewindes 20 ist so gewählt, dass ein Festklemmen durch den Be wegungsdreck vermieden ist. Die Röstunter- lage kann auch eben oder schalenförmig aus geführt sein.
Die Wirkungsweise ist folgende. Im Ruhe zustand wird das Röstgut auf die Röstunter- lage 3 geschüttet. Die Röstunterlage liegt dabei auf dem untern Anschlag 22. Der Ab stand des Randes 3b vom Blechmantel '4 ist so klein, da.ss ein Durchfallen der Bohnen un möglich ist. Bei Einschalten des 3lotors auf der ersten Stufe des Schalters erfolgt eine Drehung der Röstunterlage in der Richtung, so dass die Röstunterlage 3 auf den Anschlag 22 gepresst wird.
Die Bohnen werden durch einandergewirbelt und gleichzeitig durch den darüberliegenden auf der ersten Schalterstufe eingeschalteten Wärmestrahler erhitzt und geröstet. mach erfolgtem Rösten wird durch Drehen des Schalters 17 auf die zweite Stufe die Drehrichtung des Motors gekehrt. Wäh rend des Umkehrvorganges schraubt sich unter der Wirkung der Beharrungskräfte die Röst unterlage rasch nach oben bis an den obern Anschlag 23. Dadurch vergrössert sich der Randabstand und die gegen und über den Rand wirbelnden Bohnen fallen in den Mahl zonenraum bzw. in das 3lahlwerk. Der ge mahlene Kaffee fällt durch den Führungs kanal 16 in den Becher 24 und kann sofort zur Kaffeebereitung entnommen werden.
An Stelle eines besonderen Wärmestrah lers kann auch die Röstfläche selber als Wärmestrahler ausgebildet. sein, z. B. indem unter dem. Röstblech Heizelemente angebracht werden.
Das Abheben der Röstunterlage kann auch mechanisch, wie in Fig. 7 gezeigt, erfolgen. An Stelle des Gewindes dient ein Keil 25 auf der Welle 8 zur Mitnahme der Röstunterlage 3, die auf der Nabe 26 befestigt ist. Die Auf und Abbewegung der Röstunterlage erfolgt mechanisch über den Hebel 27, der von aussen bedienbar ist. Zur Einleitung des Mahlvor ganges wird er in die punktierte Lage ge bracht. Diese Anordnung hat den Vorteil, dass die Drehrichtung beim Rösten und Mahlen die gleiche sein kann.
Der erfindungsgemässe Aufbau lässt noch weitere Varianten zu. Der Drehrichtungswech sel kann rein mechanisch mittels einer Kupp lung (Fig. 8), z. B. mit Reibungs- oder Zahn radmitnahme bewerkstelligt werden, wobei der Motor in der gleichen Richtung weiterdrehen kann. Das hat den Vorteil, dass die Masse des Motorankers nicht dem Drehrichtungswechsel unterworfen ist, wodurch die mechanischen Beanspruehungen kleiner gehalten werden können.
In Fig. 8 weist die vertikale Welle 8 zwei Kupplungsscheiben 28a und 28b auf, die mittels des Hebels 30 durch Verschieben der Welle 8 wahlweise mit. der Motorscheibe 29 ge kuppelt werden können. Das wechselweise Kuppeln kann bei Fehlen des Hebels 30, das heisst bei feststehendem Lager 9b durch Schwenken des Motors und damit der Motor scheibe 29 erreicht werden.
Bei der Einrichtung nach Fig. 8 ist ferner gezeigt, dass mit dem Drehrichtungswechsel auch ein -Wechsel der Tourenzahl der Antriebs welle durch wahlweises Kuppeln des um den Winkel a schräggestellten Antriebsmotors 10 über die -Motorscheibe 29 mit den beiden ver schieden grossen Kupplungsscheiben 28a und 28b möglich ist. Es ist. selbstverständlich, da.ss die Drehzahländerung auch rein elektrisch durch Spannungsänderung erreicht werden kann.

A switch 17 is provided for reversing the direction of rotation, which takes a corresponding polarity reversal on the motor in a known manner and which also serves as an on and off switch. The heating coil of the radiator 2 is expediently included in the switch circuit, so that it is only in operation during the stirring movement.
The way the device works is. the following. After lifting the upper part 7, in which the radiator \? is attached, the green coffee to be ground is brought into the roasting room 5 and the upper part 7 is put on. Here on the radiator 2 and the motor 10 are switched on in the + direction by the same switch movement. This causes the beans to be whirled around in the roasting room by the wing 3. The rest of the structure largely corresponds to that shown in FIG. 1. The guide channel 16 and the vessel 24 serve to drain and remove the ground coffee. The axis of rotation is driven directly by the motor 10 sitting on it. The pitch of the thread 20 is chosen so that it does not become jammed by the movement dirt. The roasting support can also be made flat or bowl-shaped.
The mode of action is as follows. In the resting state, the roasted material is poured onto the roasting base 3. The roasting pad lies on the lower stop 22. The distance between the edge 3b and the sheet metal jacket 4 is so small that the beans cannot fall through. When the 3lotors is switched on on the first level of the switch, the roasting pad is rotated in the direction that the roasting pad 3 is pressed against the stop 22.
The beans are whirled through each other and at the same time heated and roasted by the radiant heater on the first switch level above. After roasting is done, the direction of rotation of the motor is reversed by turning the switch 17 to the second level. During the reversal process, the roasting pad quickly screwed up to the upper stop 23 under the action of the inertia. This increases the edge distance and the beans swirling against and over the edge fall into the grinding zone or into the 3lahlwerk. The ground coffee falls through the guide channel 16 into the cup 24 and can be removed immediately to prepare coffee.

The roasting pad can also be lifted off mechanically, as shown in FIG. 7. Instead of the thread, a wedge 25 on the shaft 8 is used to take along the roasting pad 3, which is attached to the hub 26. The up and down movement of the roasting pad takes place mechanically via the lever 27, which can be operated from the outside. To initiate the grinding process, it is brought into the dotted position. This arrangement has the advantage that the direction of rotation during roasting and grinding can be the same.
The structure according to the invention allows further variants. The direction of rotation change sel can be purely mechanically by means of a hitch ment (Fig. 8), z. B. be accomplished with friction or gear wheel entrainment, the motor can continue to rotate in the same direction. This has the advantage that the mass of the motor armature is not subject to the change in direction of rotation, which means that the mechanical stresses can be kept lower.
