所述的片絮复合面片厚度20毫米,片絮复合面片宽度1600毫米。
相比于传统面带复合的双层结构,多层且层次分明的片絮复合面片成型的面条口感提升优势明显,面片与面絮多次复合压延成型的面片利于面筋网络更好的形成,使得成型的鲜湿面更有韧性、更有嚼劲、更有层次感。

Claims (9)

  1. 一种面片与面絮复合压延的工艺,其特征在于,包括以下步骤:
    S1、将面片用面絮成型压延得初次面片;
    S2、将步骤S1的初次面片与面絮经一组压辊压延,压辊压延初次面片时继续添加面絮,进行初次面片和一次复合面絮的一次复合压延,形成片絮一次复合面片;
    S3、将步骤S2中的片絮一次复合面片和二次复合面絮进行二次复合压延,压辊压延片絮一次复合面片时继续在执行步骤S2时的添加面絮侧进行添加一次复合面絮,进行片絮一次复合面片和一次复合面絮二次复合压延,形成片絮二次复合面片;
    S4、复合压延。
  2. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,所述的步骤S4具体为:将两条片絮二次复合面片按面絮朝内侧方向、或面絮朝外侧方向、或面絮同侧方向复合经一组压辊压延,形成两级片絮复合面片。
  3. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,在所述的步骤S3和步骤S4之间,还包括以下步骤:使片絮二次复合面片的面絮侧与面絮多次复合,形成片絮多次复合面片;所述的步骤S4为:将两条片絮多次复合面片按面絮朝内侧方向、或面絮朝外侧方向、或面絮同侧方向复合经一组压辊压延,形成多级片絮多次复合面片。
  4. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,所述的面絮通过以下步骤制备而成:将小麦粉、纯净水、食用盐按1:(0.28-0.35):(0.01-0.04)的重量称取后,将纯净水和食用盐充分搅拌融合后和小麦粉一起加入和面机中,混合搅拌5至30分钟形成面絮。
  5. 根据权利要求2或3所述的一种面片与面絮复合压延的工艺,其特征在于,所述的步骤S1具体为:所述的初次面片厚度在2毫米至20毫米,初次面片宽度在160毫米至1600毫米之间。
  6. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,所述的片絮一次复合面片厚度在2毫米至20毫米,片絮一次复合面片宽度在160毫米至1600毫米之间。
  7. 根据权利要求2所述的一种面片与面絮复合压延的工艺,其特征在于,所述的片絮二次复合面片厚度在2毫米至20毫米,片絮二次复合面片宽度在160毫米至1600毫米之间。
  8. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,所述的片絮多次复合面片厚度在2毫米至20毫米,片絮复合面片宽度在160毫米至1600毫米之间。
  9. 根据权利要求1所述的一种面片与面絮复合压延的工艺,其特征在于,所述的片絮复合面片厚度在2毫米至20毫米,片絮复合面片宽度在160毫米至1600毫米之间。
