Description
TEA BEVERAGES WITH IMPROVED TASTE
CROSS-REFERENCE TO RELATED APPLICATIONS
This application claims priority to U.S. Provisional Application No. 63/338,235, filed May 4, 2022, which is incorporated herein in its entirety.
FIELD OF THE INVENTION
The present invention relates generally to tea beverages sweetened with certain high potency sweeteners and modified with certain organic salts of sodium and/or potassium.
BACKGROUND OF THE INVENTION
Because of its unique aroma and taste, black tea is widely consumed in the world in various forms. Iced tea is a popular summer drink. Fresh iced tea is a cold drink prepared by brewing black tea followed by rapid cooling, thereby providing a cool and refreshing taste while still retaining the aroma of black tea. Large-scale preparation of packaged tea beverages, however, e.g., iced tea, is known to provide an astringent (chalky) and bitter taste.
To improve the taste of packaged black tea beverages, e.g., iced tea, sugar can be added (sucrose, fructose, glucose, lactic acid, etc.). However, this leads to increased caloric content and astringent and off-tastes may remain.
Typically, sugar-sweetened iced tea beverages contain from 30 grams of sugar to 60 grams of sugar per 18.5 US fluid ounces. Consumers increasingly prefer lower calorie versions of beverages generally, including tea beverages. Various approaches to reduced calorie tea beverages have been attempted. Substitution of synthetic high potency sweeteners for sugar provides the taste of sweetened iced tea beverages without the calories, e.g., Lipton’s Zero Sugar Southern Sweet Iced Tea utilizes sucralose instead of sucrose and Gold Peak’s Zero Sugar Sweet Tea utilizes aspartame and acesulfame K instead of sucrose.
However, consumers increasingly prefer natural high potency sweeteners. Steviabased and monk fruit-based Luo Han Guo) natural high potency sweeteners are popular choices for beverage formulations generally. However, these sweeteners are known to elicit off-tastes that are objectionable to consumers and taste different than sucrose, e.g., delayed sweetness onset, lingering sweet aftertaste, bitter taste, metallic taste, astringent taste, cooling taste, licorice-like taste, watery taste, and poor mouthfeel.
US 20080226773 describes a diet tea beverage having less than about 5 calories per 8 ounces sweetened with rebaudioside A instead of sucrose, optionally also containing erythritol and tagatose. However, rebaudioside A is known to elicit objectionable sweetness lingering and bitterness at high concentrations (e.g., 400-600 ppm).
Therefore, there remains a need for low-calorie and zero-calorie packaged tea beverages that have improved taste and flavor profiles.

II. Tea Beverages
The present disclosure relates to tea beverages having low or zero calorie content. The tea beverages comprise at least one tea product, at least one high potency sweetener, and at least one salt selected from the group consisting of sodium gluconate, sodium citrate, sodium lactate, potassium gluconate, potassium citrate, and potassium lactate.
It has been found that the described sodium and potassium salts can be used to effectively improve the taste attributes of the at least one high potency sweetener and provide tea beverages with improved sensory properties compared to a corresponding tea beverage in the absence of the sodium or potassium salt. Exemplary taste attribute modulations include decreasing or eliminating bitterness, decreasing or eliminating bitter linger, decreasing or eliminating sourness, decreasing or eliminating astringency, decreasing or eliminating saltiness, decreasing or eliminating metallic notes, improving mouthfeel, decreasing or eliminating sweetness linger, increasing sweetness onset and increasing sweetness intensity. Multiple taste attributes can be modulated simultaneously, such that the salt-containing tea beverage, overall, has more sucrose-sweetened characteristics compared to a corresponding
tea beverage without the salt(s). Methods of quantifying improvement in sucrose-sweetened characteristics are known in the art and include taste testing and histogram mapping with isosweet sucrose-sweetened beverage controls.
The tea beverages of the present invention contain at least one tea product, e.g., brewed tea or a tea extract. The tea can be any desired type of tea, for example, white, yellow, green, oolong, black, red, post-fermented, or a mixture thereof.
In certain embodiments, the tea beverage comprises brewed tea, e.g., black tea. Brewed tea is prepared by extracting the tea leaves with hot water (i.e., brewing), then separating the brewed tea from the leaves. In such embodiments, the brewed tea comprises at least about 50% by weight of the tea beverage, such as, for example, at least about 60%, at least about 70%, at least about 80%, at least about 90%, at least about 95%, or at least about 99%. In some embodiments, the beverage ingredients are added directly to the brewed tea to prepare the tea beverage. In other embodiments, the brewed tea is diluted with a volume of water, then the beverage ingredients are added to prepare the tea beverage.
Tea extract can be provided in liquid or powder form and is available from commercial sources or can be prepared. Tea extract is generally prepared by extracting the tea leaves with one or more solvents, then concentrating and/or drying as desired to provide a liquid concentrate or dried powder.
In embodiments where the tea beverage comprises water and a tea extract, e.g., a black tea extract, the tea extract is present in an amount from about 0.01% to about 6% by weight, such as, for example, from about 0.01 % to about 1.5% by weight, from about 0.01% to about 0.1% or from about 0.05% to about 1.0%.
The tea beverages of the present invention are mainly water. The remaining ingredients are dissolved in the water. Purified water or water of a standard beverage quality can be employed in order not to adversely affect beverage taste, odor, or appearance. The water typically will be clear, colorless, free from objectionable minerals, tastes and odors, free from organic matter, low in alkalinity and of acceptable microbiological quality based on industry and government standards applicable at the time of producing the beverage. In certain embodiments, the water used in the tea beverages is “treated water,” which refers to water that has been treated to reduce the total dissolved solids of the water prior to optional supplementation, e.g., with calcium. Methods of producing treated water are known to those of ordinary skill in the art and include deionization, distillation, filtration and reverse osmosis (“r-o”), among others. The terms “treated water,” “purified water,”, “demineralized water,”

Methods of preparing tea beverages are known in the art. For example, once all of the ingredients are combined, the tea beverage is pasteurized then cooled. The pasteurized tea beverage can be packaged, e.g., hot-filled into bottles prior to cooling. The cooled beverages can then be stored for distribution or immediate consumption.
EXAMPLES
Materials and Methods
Commercial natural sweeteners rebaudioside-M (95% purity), Monk fruit extract (50% Mogroside V) were used to sweeten the tea base. Food grade salts with high purity (>95%) were acquired from different suppliers.
Tea Beverages
The ingredients were dissolved in filtered water to complete dissolution. The beverages were pasteurized (89-91°C), hot-filled in 300 ml PET bottles, then cooled in ice water. Beverages were stored in 4 °C and tasted cold. Beverage brix was 0.4° and titratable acidity was 0.189% w/v as citric acid. Table 2 shows the ingredients list for the control samples (Control 1 with 472 ppm of rebaudioside M; Control 2 with 425 ppm of rebaudioside M and 50 ppm of Monk fruit extract) without salts. For test samples 1-14, different salts were added on top of each control sample in the amount (ppm) as shown in Tables 3 and 4.
Table 2. Tea Beverage Composition
Sensory Evaluation
The beverages were evaluated blindly by six expert panelists. Samples were coded and randomly presented to the panelists. Panelists were instructed to eat an unsalted cracker and rinse the mouth with water before and in between samples. The maximum samples for each session was set at 6 samples to avoid fatigue. For each sample, panelists were instructed to take 3 sips, then write down their evaluation comments.
Sensory Results
From above samples, Test 1, 2, 3, 4 and 7 were much preferred by panelists who thought that there was significant taste improvement. Test 5 and 6 were least preferred by panelists and thought to be close to control sample.
Table 5. Tea Beverages with Rebaudioside-M - Low Level of Organic Salts
Table 6. Tea Beverages with Rebaudioside-M + Monk Fruit - Lower Organic Salts
Overall, organic salts significantly improved the taste (reduced astringency, more mouthfeel, more rounded flavor) with more impact from higher salt concentrations, and panelists preferred this set over the set with lower organic salt concentrations.
