Abstract
ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有する造粒物であって、かさ比重が0.26~0.40g/mlであり、平均粒子径が100~450μmである、造粒物。本発明の造粒物は、様々な飲食品に使用することができる。
Description
本発明は、水溶性食物繊維を含有する造粒物及びその製造方法、水溶性食物繊維を含有する粒子及びその製造方法、並びに当該造粒物や粒子を含む飲食品に関する。
水溶性食物繊維には腸内環境の改善や食後血糖値の上昇抑制等の効果が知られており、水溶性食物繊維を含む製剤や飲食品が種々提案されている。例えば、特許文献1には、ガラクトマンナン分解物を有効成分とする腸内環境改善剤に関する技術が開示されている。水溶性食物繊維を含むサプリメントでは、数gのスティックタイプや、数10g~数kgの袋タイプがあり、飲食品に添加する摂取方法が推奨されている。
水溶性食物繊維を摂取するための製剤として水溶性食物繊維を含有する造粒物が挙げられるが、飲食品に添加して使用されることから、溶解性に優れ、粉立ちが少ないことが求められる。特に、酵素重量法で測定した場合の食物繊維含量が高いものについては、溶解性を高めるために造粒でかさ高くする方法が行われるが、そのような造粒物の溶解性及び粉立ちについては更なる改善が求められるところである。
本発明は、生理調整機能が期待される特定の水溶性食物繊維を含有する造粒物であって、溶解性に優れ、粉立ちが少ない造粒物、及びその製造方法を提供することに関する。また、水への沈降速度が速く当該造粒物の生産効率に優れる粒子及びその製造方法、当該造粒物や粒子を含む飲食品を提供することに関する。
本発明は、下記[1]~[5]に関する。
[1]ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有する造粒物であって、かさ比重が0.26~0.40g/mlであり、平均粒子径が100~450μmである、造粒物。

本発明によれば、生理調整機能が期待される特定の水溶性食物繊維を含有する造粒物であって、溶解性に優れ、粉立ちが少ない造粒物、及びその製造方法を提供することができる。また、水への沈降速度が速く当該造粒物の生産効率に優れる粒子及びその製造方法、当該造粒物や粒子を含む飲食品を提供することができる。
水溶性食物繊維を含有する造粒物は、原料溶液の粘度が高く、従来は噴霧乾燥で得られた中空粒子を造粒して製造されていた。本発明者らが上記課題について検討したところ、ドラム乾燥、マイクロ波加熱乾燥などの噴霧乾燥以外の乾燥方法により中実粒子が得られ、これを造粒することで従来よりかさ比重が大きい新規の造粒物を調製できることが分かった。そして、このうち特定のかさ比重及び平均粒子径の造粒物が、溶解性に優れ、粉立ちが少ないことを新たに見出した。このメカニズムは不明であるが、粒子が重質であることに起因するためと推定される。
上記のとおり、本発明の造粒物の典型例として、水溶性食物繊維を含有する中実粒子の造粒物が挙げられるが、本発明はこの態様に限定されるものではない。中実粒子以外の任意成分を含む組成物の造粒物や、中空粒子を一部含むものの造粒物であってもよい。
本発明の造粒物は、生理調整機能が期待される特定の水溶性食物繊維(以下、「水溶性食物繊維A」と称することがある)を含有する。水溶性食物繊維Aとしては、ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、フラクトオリゴ糖などが挙げられ、ガラクトマンナン及びその分解物が好ましい。水溶性食物繊維Aは1種又は2種以上を含有することができる。
ガラクトマンナンは多糖類の一群で、マンノースからなる直線状主鎖(β-(1-4)-D-マンノピラノース)にガラクトース(α-D-ガラクトピラノース)がα-(1-6)-結合したものをいう。ガラクトマンナンとしては、グァーガム、ローカストビーンガム、タラガム、カシアガム、フェヌグリークガム、セスバニアガムなどが挙げられ、ガラクトマンナン分解物はこれらのガラクトマンナンを低分子化したものである。このうち、生理調整機能の観点から、グァーガムや、グァーガム分解物が好ましい。
ガラクトマンナン分解物は、例えば、水中で酸や高温高圧下での加水分解や酵素を利用して分解した後、クロマト的手法により特定の分子量分布の画分を得る方法や、あるいはオゾンを用いた酸化分解によりある一定以上の分子量を有する画分を分解することで製造することができる。あるいは酵素反応で反応条件を精密にコントロールすることで得る方法、酵素の反応を受けやすいマンノース主鎖に対しガラクトース側鎖が粗なガラクトマンナンを基質に選択する方法等が例示でき、総じて酵素による生成法が分子量を揃える目的で好ましい。
酵素分解法に用いられる酵素は、マンノース直鎖を加水分解する酵素であれば市販のものでも天然由来のものでも特に限定されるものではないが、アスペルギルス属菌やリゾープス属菌等に由来するβ-マンナナーゼが好ましい。
クロマト分離の方法については特に限定するものではないが、多孔性ゲルを担体として分子量の違いによって分別する方法が有望である。このとき、単筒式のカラムクロマトで分画してもよいが、産業的には連続製造ができる擬似移動床クロマトの利用が望ましい。
本発明の造粒物における食物繊維含量は、好ましくは50%以上であり、60%以上、70%以上、80%以上とすることができる。また、上限値は100%以下、95%以下、90%以下とすることができ、これらいずれの組み合せの範囲としてもよい。本明細書における食物繊維含量は、AOAC 985.29に記載の酵素重量法で測定する。
本発明の造粒物は、上記水溶性食物繊維A以外の水溶性食物繊維、デキストリンや糖類、他の多糖類などを更に含有することができる。例えば、タマリンドシードガムやカラヤガム、グルコマンナン、ペクチン、セルロース、大豆多糖類、カラギナン、寒天、アルギン酸およびその塩、キサンタンガム、ジェランガム、アグロバクテリウムスクシノグリカン、カルボキシメチルセルロースおよびその塩などを更に含有することができる。また、グリセリン脂肪酸エステル、ショ糖脂肪酸エステル、レシチンといった乳化剤、アスコルビン酸、トコフェノール、フラボノイド類、ポリフェノール類といった抗酸化剤、香料、着色料、甘味料及び乳酸菌、ビフィズス菌、糖化菌、酪酸菌などの腸内有用菌、グルコース及びアミノ酸の誘導体であるグルコシノレート類、ECg、EGCgといったカテキン類、アスタキサンチン、ルテインといったカロテノイド類、L-テアニン、GABAといったアミノ酸類、ビタミン類、ミネラル類などを更に含有することができる。
本発明の造粒物におけるかさ比重は、粉立ちの観点から、0.26g/ml以上、好ましくは0.28g/ml以上、より好ましくは0.30g/ml以上、さらに好ましくは0.32g/ml以上であり、また、溶解性の観点から、0.40g/ml以下、好ましくは0.38g/ml以下、より好ましくは0.34g/ml以下であり、これらいずれの組み合せの範囲としてもよい。本明細書におけるかさ比重は、100ml部分で切断したメスシリンダーに造粒物をすりきりで測り取り、そのときの重量を測定し、g/mlを測定値とする。
本発明の造粒物における平均粒子径は、粉立ちの観点から、100μm以上、好ましくは150μm以上、より好ましくは170μm以上であり、また、溶解性の観点から、450μm以下、好ましくは350μm以下、より好ましくは250μm以下であり、これらいずれの組み合せの範囲としてもよい。本明細書における平均粒子径は、実施例記載の方法に従って測定する。
本発明の造粒物は、溶解性に優れ、粉立ちが少ないことから、様々な飲食品に配合して好適に使用することができる。従って、本発明は、本発明の造粒物や後述する製造方法で得られた粒子を含む飲食品についても提供するものである。飲食品としては、例えば、即席麺、レトルト食品、缶詰、電子レンジ食品、即席スープ・みそしる類、フリーズドライ食品等の即席食品類、清涼飲料、果汁飲料、野菜系飲料、豆乳飲料、コーヒー飲料、茶飲料、粉末飲料、濃縮飲料、栄養飲料、アルコール飲料等の飲料類、パン、パスタ、生麺、ケーキミックス、から揚げ粉、パン粉等の小麦粉製品、キャラメル、キャンディー、チューイングガム、チョコレート、クッキー、ビスケット、ケーキ、パイ、スナック、クラッカー、和菓子、デザート菓子等の菓子類、ソース、トマト加工調味料、風味調味料、調理ミックス、たれ類、ドレッシング類、つゆ類、カレー・シチューの素類等の調味料、加工油脂、バター、マーガリン、マヨネーズ等の油脂類、乳飲料、ヨーグルト類、乳酸菌飲料、アイスクリーム類、クリーム類等の乳製品、冷凍食品、魚肉ハム・ソーセージ、水産練り製品等の水産加工品、畜肉ハム・ソーセージ等の畜産加工品、農産缶詰、ジャム・マーマレード類、漬け物、煮豆、シリアル等の農産加工品、粉末、錠剤、カプセル、ドリンク形状のサプリメント、高栄養食品、流動食、濃厚流動食、医療食等の栄養食品等がある。加えてウシ、ブタ、家禽といった家畜動物用の飼料、家庭用愛玩動物の餌類への適用も可能である。各種飲食物への添加方法は、特に限定されるものではなく、あらかじめ原材料に添加したり、その製造工程中で添加したり、調理中に添加したり、喫食時に添加するなどして利用できる。また、本発明の造粒物や後述する製造方法で得られた粒子は、各種飲食物へ添加することなく、そのまま粉末状態で摂取することもできる。
本発明の造粒物の製造方法は特に限定されないが、例えば、上記水溶性食物繊維Aを含有し、好ましくは酵素重量法で測定した食物繊維含量が50%以上の溶液を、噴霧乾燥以外の乾燥方法で乾燥させて粒子を調製する工程(工程A)、及び得られた粒子又は得られた粒子を含む組成物を造粒する工程(工程B)を含む製造方法が挙げられる。
(工程A)
水溶性食物繊維を含有する原料溶液の食物繊維含量は、好ましくは50%以上であり、60%以上、70%以上、80%以上とすることができる。また、上限値は100%以下、95%以下、90%以下とすることができ、これらいずれの組み合せの範囲としてもよい。原料溶液は、上記水溶性食物繊維Aの他、上記水溶性食物繊維A以外の水溶性食物繊維、デキストリンや糖類、他の多糖類などを更に含有することができる。例えば、タマリンドシードガムやカラヤガム、グルコマンナン、ペクチン、セルロース、大豆多糖類、カラギナン、寒天、アルギン酸およびその塩、キサンタンガム、ジェランガム、アグロバクテリウムスクシノグリカン、カルボキシメチルセルロースおよびその塩などを更に含有することができる。また、グリセリン脂肪酸エステル、ショ糖脂肪酸エステル、レシチンといった乳化剤、アスコルビン酸、トコフェノール、フラボノイド類、ポリフェノール類といった抗酸化剤、香料、着色料、甘味料及び乳酸菌、ビフィズス菌、糖化菌、酪酸菌などの腸内有用菌、グルコース及びアミノ酸の誘導体であるグルコシノレート類、ECg、EGCgといったカテキン類、アスタキサンチン、ルテインといったカロテノイド類、L-テアニン、GABAといったアミノ酸類、ビタミン類、ミネラル類などを更に含有させることができる。

噴霧乾燥以外の乾燥方法としては、ドラム乾燥、マイクロ波加熱乾燥、遠赤外線加熱乾燥、加熱水蒸気乾燥、真空凍結乾燥、間接加熱乾燥、熱風乾燥、送風乾燥、除湿空気乾燥、加圧乾燥、膨化乾燥、スピン乾燥、フライ乾燥、自然乾燥、天日乾燥、低温乾燥などが挙げられ、ドラム乾燥、マイクロ波加熱乾燥が好ましい。
(工程B)
造粒に用いる粒子は、工程Aで得られた中実粒子をそのまま用いることもできるが、水への沈降速度が速く造粒物の生産効率を良くする観点から、かさ比重が、好ましくは0.56~0.82g/ml、より好ましくは0.60~0.72g/mlであり、平均粒子径が、好ましくは45~185μm、より好ましくは60~180μmであるものに調整して用いることもできる。造粒に用いる粒子のかさ比重や平均粒子径は、ロールクラッシャー、カッターミル、自生粉砕機、スタンプミル、石臼型、らいかい機、リングミル、パワーミル、ローラーミル、ジェットミル、ハンマーミル、ピンミル、回転ミル、振動ミル、遊星ミルなどによる粉砕と、分級機、ふるいわけ機、スクリーンなどによる整粒により所望の範囲内に調整することができる。当該粒子は、造粒に好適に用いることができるが、上記のとおり、飲食品に配合したり、そのまま粉末状態で摂取することもできる。

また、粒子の他デキストリンや糖類、他の多糖類、例えばタマリンドシードガムやカラヤガム、グルコマンナン、ペクチン、セルロース、大豆多糖類、カラギナン、寒天、アルギン酸およびその塩、キサンタンガム、ジェランガム、アグロバクテリウムスクシノグリカン、カルボキシメチルセルロースおよびその塩などを更に含有することができる。また、グリセリン脂肪酸エステル、ショ糖脂肪酸エステル、レシチンといった乳化剤、アスコルビン酸、トコフェノール、フラボノイド類、ポリフェノール類といった抗酸化剤、香料、着色料、甘味料及び乳酸菌、ビフィズス菌、糖化菌、酪酸菌などの腸内有用菌、グルコース及びアミノ酸の誘導体であるグルコシノレート類、ECg、EGCgといったカテキン類、アスタキサンチン、ルテインといったカロテノイド類、L-テアニン、GABAといったアミノ酸類、ビタミン類、ミネラル類などの成分を含む組成物を造粒することも可能であり、また、造粒後の造粒物にこれらの成分を含む組成物を混合することも可能である。
造粒は、流動層造粒機(パウレック社製、製品名FD-MP-01)など、公知の造粒装置を用いて行うことができる。なお、造粒時の造粒物のかさ比重は、バインダー液の噴霧量を適宜調整することで調製可能である。例えば、かさ比重を大きくしたいときには、バインダー液の噴霧量を多くし、かさ比重を小さくしたいときには、バインダー液の噴霧量を少なくすることで、造粒物の粒子サイズやかさ比重を調整することができる。
本態様の製造方法において、造粒物のかさ比重や平均粒子径は、ロールクラッシャー、カッターミル、自生粉砕機、スタンプミル、石臼型、らいかい機、リングミル、パワーミル、ローラーミル、ジェットミル、ハンマーミル、ピンミル、回転ミル、振動ミル、遊星ミルなどによる粉砕と、分級機、ふるいわけ機、スクリーンなどによる整粒により所望の範囲内に調整することができる。
本態様の製造方法においては、工程A、Bの他、粉体混合など公知の工程を有していてもよい。
以下、実施例及び比較例を挙げて本発明を具体的に説明するが、本発明はこれらに限定されるものではない。
<食物繊維含量、かさ比重、平均粒子径の測定>
食物繊維含量は、AOAC 985.29に記載の酵素重量法で測定した。かさ比重は、100ml部分で切断したメスシリンダーに造粒物をすりきりで測り取り、そのときの重量を測定し、g/mlを測定値とした。平均粒子径は、乾式粒度分布測定装置(レーザー回折式、LS13 320(BECKMAN COULTER製))で測定し、測定条件は、分散媒を空気、測定時間を60秒とし、粒度の算出条件は、分散媒屈折率の実数部を1.05、サンプル屈折率の実数部を0、虚数部を1とし、自動的に平均粒子径を算出した。

粒子の調製
調製例1~7、10~12
水900質量部に塩酸を加えてpHを4.5に調整した後、その水にβ-マンナナーゼ0.2質量部とグアー(Cymopsis tetragonolobus)の胚乳100質量部を添加混合し、55℃~65℃で24時間酵素を作用させ、グアーに含まれるガラクトマンナンを加水分解した。次に、反応液を90℃、30分間加熱し酵素を失活させ、加水分解反応を停止させた。次に加水分解物を含む反応液を遠心分離装置にて3000rpmで処理し、反応液を未反応物と清澄液とに分離させるとともに、清澄液のみを採取した。次に、採取した清澄液に濾過助剤及び活性炭を添加して精製を行い、不純物を吸着除去した。次に、UHT殺菌(140℃、4秒)処理し、ただちに冷却した。次に溶液をNaOHで中和してpHを約7.0にした。得られた溶液を遠心式薄膜濃縮装置で固形分30%になるように減圧濃縮をし、原料溶液を調整した。固形分30%の原料溶液をドラムドライヤにて水分が10%以下になるまで乾燥した。ドラムドライヤ処理条件は、蒸気圧力0.3MPa・G、ドラム回転数1.0rpmで実施した。得られた乾燥物をパワーミルで粉砕し、通篩により粒子を調製した。得られた粒子の食物繊維含量、かさ比重、平均粒子径を上記方法により測定した。結果を表1に示す。なお、原料溶液の食物繊維含量を上記方法により測定したところ、粒子の食物繊維含量と同じであった。調製例1で得られた粒子の電子顕微鏡写真(倍率:500倍)を図1に示す。図1に示す粒子は、粒子内部に空洞がなく、中実粒子であることが分かる。
調製例1~7、10~12

調製例8
水溶性食物繊維として表1に記載したものを用いた以外は調製例1と同様にして、粒子を調製した。使用した水溶性食物繊維の詳細を以下に示す。調製例8では、得られたグァーガム分解物100質量部に対して難消化デキストリン(松谷化学社製、製品名パインファイバー)を20質量部用いて調製した。
水溶性食物繊維として表1に記載したものを用いた以外は調製例1と同様にして、粒子を調製した。使用した水溶性食物繊維の詳細を以下に示す。調製例8では、得られたグァーガム分解物100質量部に対して難消化デキストリン(松谷化学社製、製品名パインファイバー)を20質量部用いて調製した。
調整例9
原料溶液をスプレードライヤにより噴霧乾燥した以外は調製例1と同様にして、粒子を調製した。得られた粒子の電子顕微鏡写真(倍率:500倍)を図2に示す。図2に示す粒子は、粒子内部が空洞になっており、中空粒子であることが分かる。

<沈降速度>
25℃、50gの水に各調製例の粒子を3gのせて、目視にて水濡れし沈むまでの時間を測定した。結果を表1に示す。沈降速度が速いほど、造粒物の生産効率に優れるとみることができ、好ましくは90秒以下、より好ましくは30秒以下、更に好ましくは20秒以下である。
25℃、50gの水に各調製例の粒子を3gのせて、目視にて水濡れし沈むまでの時間を測定した。結果を表1に示す。沈降速度が速いほど、造粒物の生産効率に優れるとみることができ、好ましくは90秒以下、より好ましくは30秒以下、更に好ましくは20秒以下である。
表1に示すように、かさ比重が0.56~0.82g/ml、平均粒子径が45~185μmの範囲内である調製例1~8、13の粒子は、いずれも沈降速度に優れていたことが分かる。
造粒物の調製
実施例1~10、12、13、比較例1~5
表2、3に記載した粒子を流動層造粒により造粒し、造粒物を調製した。流動層造粒の条件は、入口温度75℃、出口温度45℃で、スプレー噴霧圧は40L/minで、スプレー噴霧時間を適宜調節して実施した。得られた造粒物の食物繊維含量、かさ比重、平均粒子径を上記方法により測定した。結果を表2、3に示す。
実施例1~10、12、13、比較例1~5
表2、3に記載した粒子を流動層造粒により造粒し、造粒物を調製した。流動層造粒の条件は、入口温度75℃、出口温度45℃で、スプレー噴霧圧は40L/minで、スプレー噴霧時間を適宜調節して実施した。得られた造粒物の食物繊維含量、かさ比重、平均粒子径を上記方法により測定した。結果を表2、3に示す。
実施例11
調製例1で得られた粒子100質量部に対して、イヌリンを30質量部添加したものを原料とした以外は実施例1~10と同様にして造粒物を調製した。得られた造粒物の食物繊維含量、かさ比重、平均粒子径を上記方法により測定した。結果を表2に示す。

<溶解性>
各実施例、比較例の造粒物6gを、25℃、100mlの水に添加後10秒攪拌し、目視にて溶解するまでの時間を測定した。結果を表2、3に示す。なお、180秒を超えても溶解しないものについては、それ以上の測定を行わず「180↑」と表記した。180秒以下であれば溶解性が良いと判断することができる。
各実施例、比較例の造粒物6gを、25℃、100mlの水に添加後10秒攪拌し、目視にて溶解するまでの時間を測定した。結果を表2、3に示す。なお、180秒を超えても溶解しないものについては、それ以上の測定を行わず「180↑」と表記した。180秒以下であれば溶解性が良いと判断することができる。
<粉立ち>
幅35mm、長さ150mm、背貼り幅5mmのスティックをアルミラミネートで作成し、各実施例、比較例の造粒物を6g充填してスティック充填品を調製した。スティック充填品を50mlのトールビーカーに添加した際の粉立ちについて、以下の判定基準に基づき目視で確認した。結果を表2、3に示す。

○:ビーカーの高さ以上に粉が舞うことはないが少し粉立ちが見られる
×:ビーカーの高さ以上に粉が舞う
幅35mm、長さ150mm、背貼り幅5mmのスティックをアルミラミネートで作成し、各実施例、比較例の造粒物を6g充填してスティック充填品を調製した。スティック充填品を50mlのトールビーカーに添加した際の粉立ちについて、以下の判定基準に基づき目視で確認した。結果を表2、3に示す。

◎:粉立ちが見られない
○:ビーカーの高さ以上に粉が舞うことはないが少し粉立ちが見られる
×:ビーカーの高さ以上に粉が舞う
表2、3に示すように、かさ比重が0.26~0.40g/ml、平均粒子径が100~450μmの範囲内である実施例1~13の造粒物は、いずれも溶解性に優れ、粉立ちが少ないものであったことが分かる。
<粉末清涼飲料>
実施例1の造粒物30gに結晶ブドウ糖36g、粉糖25g、クエン酸(無水)6g、クエン酸三ナトリウム(結晶)3gを混合し、粉末清涼飲料を調製した。調製した粉末清涼飲料20gを25℃、500mlの水に添加したが、添加時の粉立ちが見られず、溶解性も良好であった。
実施例1の造粒物30gに結晶ブドウ糖36g、粉糖25g、クエン酸(無水)6g、クエン酸三ナトリウム(結晶)3gを混合し、粉末清涼飲料を調製した。調製した粉末清涼飲料20gを25℃、500mlの水に添加したが、添加時の粉立ちが見られず、溶解性も良好であった。
<食パン>
強力粉700g、ドライイースト12g、イーストフード1g、水420gをミキサーボールに投入し、低速で4分間、中速で2分間混合し中種生地を得た。該生地を27℃で4時間発酵させた後、強力粉300g、砂糖80g、生クリーム100g、食塩20g、モルトシロップ3g、水230gを添加した後、低速で4分間、高速で3分間混合した。その後、バター40g、酵素入りショートニング20gを投入した。実施例1の造粒物を67g加えた後に低速で1分間、高速で3分間混合し本捏生地を得た。該生地を27℃で30分間発酵させた後、1個当たり215gになるよう量りとって分割し、丸めを行い、さらに20分間生地を寝かせた。次に、該生地を成型した後、1斤用ケースに入れ、38℃、湿度85%の発酵槽で100分間最終発酵させた後、蓋をかぶせ上火190℃、下火210℃の釜で20分間焼成し、食パンを得た。調製時に、実施例1の造粒物を加えるが、粉立ちが見られず、本捏生地に均一に混合されていた。
強力粉700g、ドライイースト12g、イーストフード1g、水420gをミキサーボールに投入し、低速で4分間、中速で2分間混合し中種生地を得た。該生地を27℃で4時間発酵させた後、強力粉300g、砂糖80g、生クリーム100g、食塩20g、モルトシロップ3g、水230gを添加した後、低速で4分間、高速で3分間混合した。その後、バター40g、酵素入りショートニング20gを投入した。実施例1の造粒物を67g加えた後に低速で1分間、高速で3分間混合し本捏生地を得た。該生地を27℃で30分間発酵させた後、1個当たり215gになるよう量りとって分割し、丸めを行い、さらに20分間生地を寝かせた。次に、該生地を成型した後、1斤用ケースに入れ、38℃、湿度85%の発酵槽で100分間最終発酵させた後、蓋をかぶせ上火190℃、下火210℃の釜で20分間焼成し、食パンを得た。調製時に、実施例1の造粒物を加えるが、粉立ちが見られず、本捏生地に均一に混合されていた。
本発明の造粒物は、様々な飲食品に使用することができる。
Claims (11)
- ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有する造粒物であって、かさ比重が0.26~0.40g/mlであり、平均粒子径が100~450μmである、造粒物。
- 前記水溶性食物繊維における食物繊維含量が50%以上である、請求項1に記載の造粒物。
- 前記ガラクトマンナンが、グァーガム、ローカストビーンガム、タラガム、カシアガム、フェヌグリークガム、及びセスバニアガムからなる群より選択される1種以上を含む、請求項1又は2に記載の造粒物。
- ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有する溶液を、噴霧乾燥以外の乾燥方法で乾燥させて粒子を調製する工程、及び得られた粒子又は得られた粒子を含む組成物を造粒する工程を含む、造粒物の製造方法。
- 前記乾燥方法が、ドラム乾燥、マイクロ波加熱乾燥、遠赤外線加熱乾燥、加熱水蒸気乾燥、真空凍結乾燥、間接加熱乾燥、熱風乾燥、送風乾燥、除湿空気乾燥、加圧乾燥、膨化乾燥、スピン乾燥、フライ乾燥、自然乾燥、天日乾燥、及び低温乾燥からなる群より選択される1種以上の方法を含む、請求項4に記載の製造方法。
- 前記粒子のかさ比重が0.56~0.82g/mlであり、平均粒子径が45~185μmである、請求項4又は5に記載の製造方法。
- 前記水溶性食物繊維における食物繊維含量が50%以上である、請求項4~6いずれかに記載の製造方法。
- 前記ガラクトマンナンが、グァーガム、ローカストビーンガム、タラガム、カシアガム、フェヌグリークガム、及びセスバニアガムからなる群より選択される1種以上を含む、請求項4~7いずれかに記載の製造方法。
- ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有し、かさ比重が0.56~0.82g/mlであり、平均粒子径が45~185μmである、粒子。
- ガラクトマンナン及びその分解物、イヌリン、難消化性デキストリン、ポリデキストロース、アラビアガム、サイリウムシードガム、イソマルトデキストリン、イソマルトオリゴ糖、並びにフラクトオリゴ糖からなる群より選択される1種以上を含む水溶性食物繊維を含有する溶液を、噴霧乾燥以外の乾燥方法で乾燥させて粒子を調製する工程を含む、粒子の製造方法。
- 請求項1~3いずれかに記載の造粒物及び/又は請求項9に記載の粒子を含む、飲食品。
