The rising melting point was measured by the standard fat analysis test method (Japan Oil Chemists' Society) "2.2.4.2-1996 melting point (rising melting point)".

 まず、パティの原材料として使用する以下の大豆蛋白を水戻しした。水戻し後の質量は以下のとおりであった。
 フジニックエース500 2.1倍
 ベジテックスSHF 1.8倍
 ニューフジプロSEH 3倍
これらの3種の大豆蛋白質素材(水戻し後)を質量比で1:1:1の割合で混ぜ合わせ、混合した大豆蛋白質素材を得た。これを、10×10cmのガーゼの上に3gはかり取った。ガーゼの四隅をつまみ上げることで混合した大豆蛋白質素材をガーゼで包んだ状態とし、ガーゼの四隅を輪ゴムでとめた。
 次に、ガーゼで包んだ混合した大豆蛋白質素材を、20℃の水浴中の100mLビーカー内に入った表1に記載の肉様食品用食感改良組成物に、接触させた。10分後、ガーゼで包んだ大豆蛋白質素材を引き上げ、金網の上で5分間放置した。ガーゼ袋の中から混合した大豆蛋白質素材を取り出し、その質量を測定した。大豆蛋白質素材の質量の増加率を算出した。
 結果を表1に示す。
<Mass increase rate of soy protein material>

<大豆パティの製造方法>
 実験例1~9の大豆パティを以下の手順で製造した。
1.大豆蛋白質素材を水に浸して1時間放置した後、絞って水を切った。
2.大豆蛋白質素材のうち、ベジテックスSHFとアペックス950は、フードプロセッサーで細かく裁断した。
3.材料を表2の割合で量り取り、フードプロセッサーでよく混合した。表2に記載の「菜種油又は肉様食品用食感改良剤」については、実験例1では菜種油100%、実験例2ではSスペシャル100LT、実験例3ではユーロメルト20B、実験例4ではファシエ タイプ2、実験例5ではユニクールゴールド、実験例6ではTスペシャルM、実験例7では菜種油94質量%CV-1L6質量%、実験例8では菜種油97質量%CV-1L3質量%、実験例9では菜種油99質量%CV-1L1質量%を用いた。なお、以下、表中の大豆蛋白質素材の割合は、水戻し後の大豆蛋白質素材の割合を意味する。
4.3の混合物を75g量り取り、直径80mmの円柱形状のセルクルを使ってハンバーグの形状に成型し、セルクルから抜き取ったハンバーグ形状の肉様加工品をフライパンで両面に焦げ目がつくまで焼き、蓋をして蒸し焼きにし、実験例1~9の大豆パティを得た。
<Manufacturing method of soybean patties>

 また、食感向上の観点から、ドリップ率の高い肉様食品が好ましい。実験例7~9を実験例1と比較すると、ドリップ率が高まることから、20℃、30rpmで測定したときのB型粘度が1040cps以上(1040mPa・s以上)である肉様食品用食感改良組成物を使用して肉様食品を製造することが好ましく、5000cps以上(5000mPa・s以上)である肉様食品用食感改良組成物を使用して肉様食品を製造することがより好ましく、17600cps以上(17600mPa・s以上)である肉様食品用食感改良組成物を使用して肉様食品を製造することがさらに好ましいことがわかった。
 肉様食品のドリップ率を高めるには、植物性蛋白質素材及び肉様食品用食感改良組成物の組み合わせとして、相互に10分接触させた場合の植物性蛋白質素材の質量増加率が41質量%以下である場合の組み合わせを使用することが好ましく、0%以下である場合の組み合わせを使用することがより好ましいことがわかった。

 肉類食品のほぐれ性を向上させる観点から、実験例7~9を実験例1と比較すると、20℃、30rpmで測定したときのB型粘度が1040cps以上(1040mPa・s以上)である肉様食品用食感改良組成物を使用して肉様食品を製造することが好ましく、5000cps以上(5000mPa・s以上)である肉様食品用食感改良組成物を使用して肉様食品を製造することがより好ましいことがわかった。

 実験例2~6については、実験例1と比べ、表面がカリッと香ばしく、噛んだ時には油が滴り、咀嚼中は適度なほぐれにより油の旨味を感じやすかった。
 ほぐれ性を向上させる観点から、20℃の固体脂含量が7.5%以上の肉様食品用食感改良組成物を使用して肉様食品を製造することが好ましいことがわかった。また、58%以下の肉様食品用食感改良組成物を使用して肉様食品を製造することが好ましく、37.9%以下の肉様食品用食感改良組成物を使用して肉様食品を製造することがより好ましく、23.5%以下の肉様食品用食感改良組成物を使用して肉様食品を製造することがより好ましいことがわかった。
 ほぐれ性及びジューシー感を向上させる観点から、ドリップ率が1.8質量%以上2.2質量%以下であることが好ましいことがわかった。
 また、ほぐれ性及びジューシー感を向上させる観点から、大豆蛋白素材の質量増加率が41質量%以下である肉様食品用食感改良組成物を使用することが好ましく、0質量%以下である肉様食品用食感改良組成物を使用することがより好ましいことがわかった。
<Sensory evaluation>
The sensory evaluation method adopted in this evaluation is the scoring method. The evaluators were seven trained professional panels. The evaluation items and scores were as follows. <ソイメンチの製造方法>
 実験例1~4のソイメンチを以下の手順で製造した。
1.大豆蛋白質素材を水に浸して1時間放置した後、絞って水を切った。
2.大豆蛋白質素材のうち、ベジテックスSHFとアペックス950は、フードプロセッサーで細かく裁断した。

4.3の混合物を50g量り取り、小判形状に手で丸めた後、小麦粉、バッター液、およびブレッダーを順に全体にまとわせるようにくぐらせたメンチカツ形状の肉様加工品を170℃で4分間油調した後1時間放置して、実験例1~4のソイメンチを得た。なお、バッター液は、全卵60g、小麦粉27g(日清製粉社製)、および水30gを混合して調製した。ブレッダーは、パン粉(フライスター社製)を用いた。

4.3の混合物を20g量り取り、餃子の皮(モランボン社製)で包んだ餃子形状の肉様加工品をフライパンで5分間蓋をして蒸し焼きにした後1時間放置して、実験例1~4のソイ餃子を得た。

Further, from the viewpoint of improving the looseness and juiciness, it was found that it is more preferable to use a texture-improving composition for meat-like foods in which the mass increase rate of the soybean protein material is 0% by mass or less.
