Abstract

A khinkali shaping device is provided, comprising a bedplate (11); a shaping unit having a circular plate (8) for placing dough and filling, a vertical shaft (1), and a casing (2) capable of performing reciprocal motion along the shaft, horizontal discs (5) and (6) pivotally connected to each other by means of holding plates (3) and shaping blades (4). The upper disc (6) is mounted on the vertical shaft, and the lower disc (5) is mounted on the casing. The device is further provided with a casing motion mechanism made as a horizontal guide (12) secured to the bedplate, a lever (14) with a knob (13), and a bracket (15) provided with rollers (16) that is pin-connected to the casing.

Description

KH IN KALI SHAPING DEVICE
The present utility model pertains to devices for preparing starchy food products with fillings, and more particularly, to devices for shaping khinkali (a Georgian traditional dumpling), that can be used for preparing khinkali in small enterprises and in household environment.
A khinkali shaping device comprising a shaping unit having a surface for dough and filling placement is known in the art. The shaping unit comprises a vertical shaft, a casing with a knob that is movable along the shaft, and horizontal discs pivotally connected to each other by means of holding plates and shaping blades, the lower disc being fastened to the casing and, along its entire perimeter, is provided with uniformly spread recesses for pivot fixing of the holding plate ends, and the upper disc is mounted on the vertical shaft and, along its entire perimeter, is provided with uniformly spread recesses for pivot fixing of the shaping blade ends. The holding plate tips are pin-connected to the shaping blades which are capable of entering into the upper disc recesses and into through cuts made in a circular plate fixed on the upper disc for placing dough and filling. The mentioned through cuts precizely match with the recesses made in the discs. In addition, springs are set on the vertical shaft for controlling the motion of the casing with a knob, and the upper and lower discs are connected with each other by means of pins to prevent transverse motion of the holding plates and shaping blades when the lower disc is in motion. Furthermore, the pins are fixedly fastened in the upper disc, and the pins are movably fastened in the lower disc in holes that are specially provided in this disc /l/.
The drawback of the above described conventional device is relatively lower efficiency as well as considerable labour consumption and harassing labour needed for khinkali formation.
Technical effect of the present utility model is increased efficiency and reduced labour consumption of khinkali formation.
The essence of the present utility model lies in that the khinkali shaping device comprises a bedplate, a shaping unit having a circular plate for placing dough and filling thereonto, a vertical shaft, a casing that is capable of performing reciprocal motion along the shaft, and horizontal discs being pivotally connected by means of holding plates and shaping blades. An upper disc of the discs is mounted on the vertical shaft, and a lower disc of the discs is mounted on the casing. The upper and lower discs have recesses uniformly spread along their entire perimeter for pivot fixing the shaping blades and holding plate ends. The holding plate tips are pin- connected to the shaping blades capable of entering into the recesses of the upper disc and into the through cuts of the circular plate fixed on the upper disc for placing dough and filling threonto. The mentioned through cuts are brought into line with recesses made in the discs. A spring is set on the vertical shaft between the upper and lower discs. The device is further provided with the casing motion mechanism made as a horizontal guide secured to the bedplate, a lever with a knob, and a bracket with rollers that is pin-connected to the casing; the bracket being capable of moving by the rollers within said guide and, at the same time, of turning about the axis of said rollers when exerting upon the lever provided with a knob.
In the prefered embodiment, the bracket has Mike shape.
The above described features of the khinkali shaping device which constitute the essence of the present utility model enable to achieve the above-mentioned technical effect. In particular, by providing the device with the casing motion mechanism made as a horizontal guide secured to the bedplate, a lever with a knob, and a bracket with rollers that is pin-connected to the casing, the bracket being capable of moving by the rollers within said guide and, at the same time, of turning about the axis of said rollers when exerting upon the lever provided with a knob, enables to increase efficiency and to reduce labour consumption in khinkali shaping process.
The device according to the present utility model enables to mechanise the khinkally formation process in small enterprise and in houshold environment, and there is no need of significant forceful actions from a human-operator in khinkali formation process. Its design enables to obtain a perfect shape of a finished product having uniform pleats and enhanced quality.
The present utility model is explained by the appended drawings, wherein fig. 1 depicts the khinkali shaping device in its initial state as isometric projection; fig. 2 depicts the back view of the same device in its operational state; fig. 3 depicts the same device in its operational state as isometric projection; fig. 4 shows the shaping unit cross sectional view; fig. 5 illustrates the front view of the lower and the upper discs; fig. 6 illustrates the front view of the circular plate for placing dough and filling; and fig. 7 shows the top view of the same as depicted in fig. 6.
According to the present utility model, an embodiment with 19 shaping blades is provided which enable to obtain khinkali having 19 pleats.
Referring to figures 1 to 7, the Khinkali shaping device comprises a shaping unit having a surface for placing dough and the dumpling filling thereon; a vertical shaft 1; a casing 2 capable of performing reciprocal motion along the shaft 1; and horizontal discs 5 and 6 pivotally connected to each other by means of holding plates 3 and shaping blades 4. The lower disc 5 is fastened to the casing 2, and the upper disc 6 is mounted on the shaft 1. The upper and the lower discs 6 and 5 are provided with uniformly spread recesses 7 along their perimeters for pivot fixing the shaping blades 4 and holding plate 3 ends by means known in the prior art (see the patent document GE U 1784, 11.11.2013). The holder plate 3 tips are pin-connected to the shaping blades 4. On the upper disc 6, a circular plate 8 having through cuts 9 for placing dough and dumpling filling is fixed. The through cuts 9 correspond to the recesses 7 made in the discs 5 and 6. The shaping blades 4 are capable of entering into the recesses 7 of the upper disc 6 and into the through cuts 9 made in the circular plate 8 fixed on the upper disc 6 for placing dough and the dumpling filling. In addition, a spring 10 is set on the vertical shaft 1 between the upper and lower discs 6 and 5 so as to control the casing 2 motion. The device with the vertical shaft 1 is mounted on a bedplate 11 and is further provided with the casing 2 motion mechanism made as a guide 12 mounted on the bedplate 11, a lever 14 with a knob 13, and a Γ- shape bracket 15. The bracket 15 is provided with rollers 16 and is pin-connected with the casing 2, being thereby capable of moving by rollers within the guide 12 and, at the same time, of rotating about the rollers 16 axis (not designated by a reference numeral) by exerting upon the lever 14.
The dumpling shaping device operates in the manner as follows: the device is fixed on a support suface, e.g. on a table (not shown in the figures), by the bedplate 11. Dough that is kneaded and rolled in advance and mince are placed onto the circular plate 8 fixed on the upper disc 6. When a human-operator pushes with his/her hand against the lever 14 having the knob 13, the bracket 15, which is pin-connected with the casing 2, moves forward by the rollers 16 within the guide 12 mounted on the bedplate 11 and, at te same time, turns about the rollers 16 axis, moving thereby the casing 2 and the lower disc 5 mounted thereon in upward direction along the vertical shaft 1. With the upward motion of the casing 2, the spring 10 set on the vertical shaft 1 between the upper and lower discs 6 and 5 is compressed, the shaping blades 4 start moving toward the center by means of holding plates 3 within the through cuts 9 made in the circular plate 8, and the dough edges are pressed against each other untill they are stuck together. Thus formed khinkali has uniform pleats and its formation is completed by taking it out of the device to start the next step. In order for the device to revert to its initial state, a human-operator raises the lever 14, having the knob 13, to cause turning of the bracket 15 about the rollers 16 axis and, at the same time, to move it back by the rollers 16 within the horizontal guide 12 mounted on the bedplate 11, and, thereby, to move the casing 2, together with the lower disc 5 mounted thereon, downward along the vertical shaft 1. With moving the casing 2 downward, the spring 10 is expanded, the shaping blades 4 start moving away from the center by means of the holding plates 3 within the through cuts 9 made in the circular plate 8, and, thereby, the device returns to its initial state.
The device according to the present utility model enables to mechanise the khinkally formation process, it has a simple design, is cost-effective, has increased productivity and reduced specific amount of metal. Energy consumption is excluded in operation and there is no need of significant forceful actions from a human-operator in khinkali formation process.

Claims
1. A Khinkali shaping device comprising
a bedplate; and a shaping unit having:
a circular plate for placing dough and filling thereonto;
a vertical shaft;
a casing capable of performing reciprocal motion along said shaft;
horizontal discs being pivotally connected to each other by means of holding plates and shaping blades;
an upper disc of said discs being mounted on said vertical shaft, and a lower disc of said discs being mounted on said casing;
said upper and lower discs having recesses uniformly spread along their entire perimeter for pivot fixing the shaping blades and holding plate ends, the holding plate tips being pin-connected to said shaping blades capable of entering into the recesses of the upper disc and into the through cuts provided in the circular plate fixed on the upper disc for placing dough and filling threonto;
said through cuts being brought into line with recesses made in said discs;
and a spring set on said vertical shaft between the upper and lower discs;
characterized in that
it is further provided with the casing motion mechanism made as a horizontal guide being secured to said bedplate, a lever with a knob, and a bracket with rollers that is pin-connected to the casing;
said bracket being capable of moving by the rollers within said guide and, at the same time, of turning about the axis of said rollers in case of exerting upon said lever provided with a knob.
2. A Khinkali shaping device in accordance with claim 1, characterized in that said bracket has Mike shape.
