To ctU/ whom it may concern:
Be it known that I, FREDERICK A. TOBLER, a citizen of the United States of America, residing at Los Angeles, in the county of Los Angeles and State of California, have invented new and useful Improvements in Combination Pastry-Knives; and I do hereby declare the following to be a full, clear, and exact description of the invention, such as will enable others skilled in the art to which it appertains to make and use the same.
My invention relates to improvements in combination pastry-knives of the class used in crimping and reaming pies, trimming cakes, &c., and has for its object, first, to provide an instrument for crimping and reaming pies simultaneously; second, to provide a spur for puncturing and lettering the face-crust of pics, thus eliminating the need for a separate instrument; third, to afford effective means for rasping the dried and burned edges from cakes and otherwise plumbing them up preparatory to glazing or frosting, which means may also be utilized as a common grater; fourth, to provide a device of this description, combined in one compact instrument, adapted to convenient and effective use for the purposes named.
A practical embodiment of my invention is represented in the accompanying drawings, in which Figure 1 represents a side elevation of the device in vertical section constructed according to my invention. Fig. 2 represents a plan view of the same. Fig. 3 designates a broken elevation of the reaming-wheel. 'Fig. 4 represents a vertical section of the reamingwheel as it may be constructed, with the cup J and the flange K formed separately and united by means of solder.

A represents a longitudinal grating-plate I substantially mounted upon a plurality of parallel ribs, said ribs contacting at B and describing a plurality of twists, then bulging laterally, forming a handle C C, when they again contact and describe another series of twists, a portion of which are turned abruptly vertical,one' wire ending in aflatwise coil D, the other in a vertical bearing or boss E.
F designates a wheel or shell rotatably mounted upon the boss E, said wheel comprising a disk G and an integral transverse fluted portion H and an integral concave flange I, or, if preferable, this wheel may be assembled after the manner shown in Fig. I,
with the cup J and the flange K formed sep- L designates a spur formed laterally and on a plane with the grater A, said spurcomprising an acute bend made in the left parallel rib preparatory to passing at right angle on a line with said grater.
The reaming-wheel is mounted vertically, so as to be out of the way when the grater is in service, which has its operating-surface op positely disposed to said wheel.
From the foregoing description itis obvious that by drawing the wheel around the rim of a pie the flutings thereon will impress a fancy crimp around the edge of the pie, while the concave-flange will ream off the excess pastry. It is also apparent that by drawing the grating-plate spherically about a layer or other cake the burned and irregular edges will respond to the action of the rasp. It is further seen that the grating-plate is not alone confined to be useful in plumbing cakes, but by its formation is serviceable as a common grater. Y
Having described my invention, what I claim as new, and desire to secure by Letters Patent, is
1. In a combination pastry-knife, comprising a longitudinally-disposed grating plane mounted upon a plurality of parallel ribs, a wheel laterally and rotatably mounted upon a prolongation of said ribs, and an interposing handle; all substantially as specified.
2. In a new article ofgmanufacture, the combination of a longitudinal grating plane with a pair of parallel ribs, said ribs comprising a handle, and terminating, one in an upwardlydisposed fiatwise coil, the other in a vertical hearing or boss, and a wheel rotatably mounted upon said boss, said wheel comprising a disk, and an integral transverse fluted portion, and an integral concave flange, and means for retaining said wheel upon its axis; all substantially as shown and described.
