To a/ZZ whom it may concern:
Be it known that I, JOHN J. IsLER, a citizen 'of the United States, residing at Elk Rapids, in the county of Antrim and State of Michigan, have invented certain new and useful Improvements in Fruit-Canning Devices; and I do declare the following to be a full, clear, and exact description of the invention, such as will enable others skilled in the art to which it appertains to make and use the saine, refer- -ence being had to the accompanying drawings, and to the letters and figures of reference marked thereon, which form a part of this specification.
This invention relates to an improved devicefor canning fruit and other perishable products; and it consists in a certain construe# tion and arrangement of parts, as hereinafter fully set forth, the essential features of which being pointed out particularly in the claims.
The object of the invention is to produce a canning device that is simple and inexpensive, by means of which fruit and other articles may be quickly and easily canned and in such manner as to be perfectly preserved. This object is attained by the construction illustrated in the accompanying drawings, in which-` Figure 1 is a side elevation of my improved device, showing a can in position therein. Fig. 2 is a central vertical section through Fig. al. Fig. 3 -is a vertical central section through the cylinder and plunger, showing the plunger drawn out.
Referring to the letters of reference, A designates a base which is rectangular in form and made, preferably, of wood.
B designates a series of vertical rods, the lower ends of which are secured in the base A. The upper ends of said rods pass loosely through the corners of the rectangular cap C and are threaded to receive the thumb-nuts a, which bear upon the upper face of lsaid cap.
D designates a vertical tube or cylinder, the lower end of which extends through the cap C and is secured therein.
E designates a plunger or piston that tightly fills the cylinder D and is adapted to reciprocate therein. Said plunger is provided with the looped handle b, secured to its upper end, by means lof which it is actuated, and, with the central opening c, passing longitudinally therethrough, which is closed at its by the valve c. f
F designatesl the Y can, which is provided with an annular groove 1l in its upper edge, in which is placed a ring of rubber o.
H designates the can-cover, the depending edge of which is adapted to enter the groove i in the top of the can and bear upon the rubber o therein, as clearly shown in Fig. 2.
In the top of the cover H is a central openingclosed by the valve fu, the stem of which extends through the cover and is attached to one end of the spring t, which is secured to the under face of the cover and serves to retain said valve on its seat.
In the operation of canning with this improved device the can is filled with the fruit or article to be canned in the ordinary manner, the cover I-I is placed thereon and the can placed upon the base A under the cap C, so that the valve o in said cover will register with the lower end of the cylinder D, a hat rubber ring u being interposed between the upper end cover and the underface of the cap C. Then by turning the thumb-nuts a the cap C is depressed, forcing the cover down upon the rubber o in the groove t' in the top of the can and compressing the runner-ring u between said cover `and the under face of said cap, thereby making it air-tight between the can and cover and between the cover and cap around the lower end of lthe cylinder D, when by drawing the plunger E upward, as shown in Fig. 3, the air will be entirely extracted from the can, the spring t yielding sufficiently to permit the valve n to rise to admit of the passage of the air therefrom. The can may then be removed by loosening the thumb-nuts a., the exhaustion of the air from said can being so complete that the cover remains held in place and the valve@ closed by atmospheric pressure. The central opening c through the plunger, closed at the top by the valve c, permits the escape of the air from the cylinder when the plunger is forced downward therein, and the bottom of said cylinder is closed by the cover of the can when-the can is in position, as shown in Figs. 1 and 2.
Vhile I have shown the top of the can provided with a groove with a ring of rubber therein, into which the edge of the cover is forced, it is evident that the cover may be IOO annular recess in its upper edge, a packing- .f
lring in said recess, the cover having a depending iange that enters the recess in the upper edge of the can and bears upon said packing-ring, said cover also having an opening therein, and avalve to close said opening, the stem of which extends downward therethrough, the spring attach ed to the under face of said cover and engaging said valve-stem, substantially asset forth.
2. The combination of a jar or can with an Y elastic packing-ring thereon, and a cover fitted to the jar or can and ring thereon, adapted presence of two witnesses.

3. A jar or can having a cover with a hole therein and a valve to close the same, and a y'spring under the hole arranged to hold the valve on its seat and to permit it to open for the extraction of airv and to close it to prevent the re-entry of air when the operation of canning or sealing is completed.
