Referring to the drawings, it will be seen that the vat comprises anout-er compartment 1 which may be of wood or sheetmetal or any suitable material. iVithin this compartment a relatively long and shallow. Vat 2 is positioned; This vat is in reality a metal pan and is spaced from the main compartment 1 by means of a plurality of relatively small angle irons 3 along its bottom and also by means of angle irons 4 along its sides. It is to be noted that the pan 2 may be readily lifted from the compartment 1 and forthis purpose it is preferably reenforced around its top edges by means of the members 5. v
It is to be particularly noted from. reference to Figures 1 and 2 that the angle irons 3 and a alternately extend from opposite ends of the vat. These angle irons at their other end are spaced from the ends of the rat so as to provide circulating channels con 7 tinuously from the center of the vat back.

This three-way valve normally connects the V pipe 11 with the pipe 15. The pipe 15 opens between the center channel irons 3, as shown in Figure 1, such opening being indicated fill by the reference character 16. Thereafter, the three-way valve connects the pipe 15 with the pipe 11 and the valve 13 for the steam is opened. The steam operates the inje ctor'lO and draws water from the reservoir 7 heating the water and pro-. pelling it through the pipe'11.; The water passes throughsuch pipe, through the valve 14, through the pipe 15 and is discharged at 16 betweenthe central irons 3. This heated water flows,as indicated by the arrows in Figures 1 and 2, back and forth across the bottom of the pan and across the sides thereof, thus heating substantially the entire areaor surface of the pan and quickly bringingthe contents of this shallow pan to pasteui'izing temperature. Any excess water due to the condensation. of the steam overflow throughthe pipe 8.
'Y Vhen the milk or'clieese has'been main- When it is considered that cheese makers are required to pasteurize the milk prior to the cheese makingoperation, it Will be appreciated that considerable difiiculty is experienccd in the usual equipments found in cheese factories due to this requirement. However, in practicing this invention, the difiiculty of adapting the apparatus noW found in cheese factories to this new condition may be readily effected With a minimum oi expense and Without unnecessary complication of the apparatus. 7
It is to be noted further that the angle irons 3 and l serve a double purpose of both reenforcing the pan and also of providing the channels for the circulating liquid.
It is to be noted further that the apparatus is extremely simple and may be produced at a minimum of machine Work.
Although the invention has been described in considerable detail, it is to be understood that the invention may be variously embodied and is, therefore, to be limited as claimed.
I claim: 1
A vat comprising an outer shell having inlet and outlet apertures at opposite ends, and an inner pan removably positioned ivithin and spaced from said outer shell, said removable pan having a plurality of longitudinally extending angle irons having vertical flanges resting upon the bottom of the outer shell and having horizontal flanges secured to the under side of the removable pan and having a plurality of longitudinally extending angle irons secured by means of their flanges to the sides of said pan and having the other flanges of such last mentioned angle irons contacting With the sides of the shell, said angle irons being alternately spaced from the ends of the outer shell, whereby atortuous channel is provided from the inlet opening in the vat to the outlet opening, said pan having a reenforcing outwardly projecting marginal portion ex tending completely around its upper edge, whereby said pan may be freely grasped and manipulated by means of the reen'forced marginal portion.
