To all whom it may concern:
Be it known-that I, WILLIAM J. DRUOKER, a citizen of the United States, and a resident of the city of New York, WVoodhaven, borou' 'h ofQueens, in the county of Queens and tate of New York, have invented a new and Improved Emulsi'fier, of which the following is a full,'clear, and exact descrip- This invention relates to mixing devices or emulsifiers an'd w'hi-le it is designed particularly for the making ofmayonnaise, it may beused for the-making of any kind of emulsions or other mixtures that require agitation for a long period of time.
Among the objects of the invention is to provide an emulsifier of a simple, inexpensive construction which may easily be kept sanitary.

In the drawings the base 7 carries a motor 8 and any suitable gearing not shown, which couples the motor to a platform 9 supported by the base for rotary movement thereon. The platform is provided with an annular groove 10 near its margin, leaving an annular flange at the marginal edge of said platform. A series of lugs extend transversely across the annular groove 10 from the marginal edge flange to the surface on the central portion of the platform. These lugs are spaced apart at intervals, preferably 90 degrees.

The base 7 has lugs 17 from whichposts 18 extend upward to support a frame 19 which holds the container 20 from which oil or the like may bedischarged in graduated quantities into the receptacle. The support 19 has at one side of its center a depending lug 21 which is preferably integral therewith and to which a stationary stirrer 22 may be secured by a clamping screw 23. The top of the stirrer is provided with a slot 24: into which extends a plate 25. The slotted portion of the stirrer is provided with a plurality of transverse bolts 26 which pass through holes 27 formed in the lower end of the plate which are considerably larger than the bolts. The plate and lug 21 are provided with mating pins 28 and holes 29 whereby the plate is locked rigidly to the lug 21 when the screw 23 is tightened. With the bolts 26 sufficiently loose the stirrer may be adjusted with respect to the plate 25 to accommodate the stirrer to any irregularities that may ocour in various makes of receptacles. After the proper adjustment has been made the bolts 26 are tightened making a permanent rigid connection between the stirrer and said plate. For cleansing purposes it is therefore necessary only to separate the stirrer from the other parts of the machine, and for cleansing purposes the bolts 26 need not be loosened. The screw 23 has a long shank for convenience 111 manipulation beyond the frame 19. The bottom of the stirrer is arched upward at 30 to permit sticky materials from lodging between the stirrer and the bottom 13 of the receptacle. By providing for the rotation of the receptacle while the stirrer remains stationary I am able to emulsify much more rapidly and thoroughly than if the stirrer were caused to rotate in a stationary recep tacle.
By reason of the portion of the wall of the receptacle extending below or beyond the bottom of the receptacle and into the annular groove 10, the said extending portion of such Wall is encompassed by the annular marginal flange formed on the platform, and hence the receptacle is braced and supported against the effects of centrifugal power developed by the axial rotation of the receptacle and its contents during the emulsifying operation.
