My improved knife comprises a holder having a circular hub 1 formed with the central perforation 2 and radiating from said extending beyond the perforation and carrying a nut 8 formed with a stem 9 adapted for insertion in a perforation formed in the blade 5 whereby said blade isreleasably retained in operative position in the said groove 4. It is evident that the blade may be secured more or less rmly in the said groove by means of the said screw 6 which is adjustable through the medium of a wrench applied to its head. Y

`What is claimed is:-
In a knife of the character described, the combination with a substantially.rectangular supporting arm having a longitudinal slot in one side face and a transversely disposed centrally located perforation above said slot at right angles thereto; of a reversible blade with longitudinal cutting edges beveled in reverse directions, either edge being adapted to be positioned in said slot, said blade having a central perforation therein, a bolt eX- tending through the perforation of said sup-Y porting arm, one end of said bolt projecting out over said blade above the perforation therein, a blade retaining nut threaded on said projecting-end of the bolt, and a peri-pheral radial stem on said nut to be received in the perforation of said blade, the inner end of said slot serving to limit the inward travel of the blade.
