To all whom it may concern:
Be it known that 1, Marcus M. Locnano, a citizen of the United States, residing at Meridian, in the county of Lauderdale, State of Mississippi, have invented certain new and useful Improvements in Canning Apparatus; and I do hereby declare the following to be a full, clear, and exact descrlption of the invention, such as willenable others skilled in the art to which it apper tains to make and use the same.

The object of the invention is to provide a practical household -.canning apparatus in which fruit or vegetables may be preserved in cans or jars, V r i A further object of the invention is to provide a canning apparatus in which successive steps in the canningprocess can be simu1- taneously and continuously carried out.
With the above objects in view, and such others relating to the details of construction, as may hereinafter appear, my invention will now be full set forth and described, reference being had to the accompanying drawings.

Each of the compartments 6 is intended to receive a frame 11 built up of four metal= lic corner posts 12, which at their lower ends are rigidly secured to a tray 13. At intermediate points, the transversely alined posts are connected by means of cross bars 14, and at their upper extremities are transversely connected by means of rods 15 upon which wooden handles 16 are mounted. The horizontal dimensions of the frame are such that it will practically fill one of the compartments 6, and in order to properly suspend the frame wltnm a compartment and at the same time to provide a cover for the compartment which will be removable with the frame, 1 mount upon the posts 12 a cover plate 17 through which the posts project, the cover plate over reaching the outside dimensions of the frame, so that when the latter is inserted in the compartments 6, the cover will rest upon the upper edges of the vat. Aside from acting as additional braces for the frame the cross rods 14 act as supports for removable trays 18, which. are brought into use, when produce is being put up in short glass jars or tin cans, but which are removed when tall cans are placed in the lower pan 13,
As above stated, the cover plate 17 is rigidly secured to the posts 12 so that it may act as a support for suspending the frame within its compartment. In order to suitably connect the cover plate 17 to the posts 12, the angle brackets 19 are connected to both the cover plate and the posts, these brackets not only properly and rigidly holding the plate in position, but further strengthening the frame structure,
In the use of the apparatus which has been described, the frames 11 are employed to support cans during the boiling or cook ing process, and may be simultaneously or alternately employed as desired. The vat 'i' is used for preliminary steps in the canning process, the basket 8 being used to support cans or jars for the exhausting process or being used to hold tomatoes or other produce forscalding in the water which is heated. in the vat 7..
It will be apparent from the foregoing description that I have provided a very simple and practical canning apparatus, wherein several processes or steps in camiing till operations may be simultaneously carried out. The apparatus draws largely for its quality of etficiencyupon the fact that the number of operations may be simultaneously carried out by the use of a single fire.
lVhat I claim as my invention is: 7 1. A canning apparatus, comprising in combination, a vat having a central fire box, said fire box subdividing the vat into compartments, a secondary vat mounted within the main vat and having a heating surface overlying the 'fire box, a scalding basket mounted in the secondary vat, and frames removably suspended in the compartments of the main vat.

A canning apparatus, comprising in combination, a vat having a central fire box, said fire box subdividing the vat into compartments, a secondary vat mounted within the main vat and having a heating surface overlying the fire box, a scalding basket mounted in the secondary vat, frames re- .movably suspended in the compartments of the main vat, and cover plates for the compartments, said cover plates being carried by the frames 7 as integral parts thereof and overlying the edges of the compartments to suspend the frames thereby.
