MEAT CHOPPER AND TENDERER.
Specification of Letters Patent.
Patented Apr. 30, 19121 Application filed February 19, 1912. Serial No. 678,659.
To all whom it may concern:
Be it known that LVILLIAM M. STANTON, a citizen of the United States, residing at Milwaukee, in the county of Milwaukee and State of Visconsin, have invented certain new and useful Improvements in Meat Choppers and Tenderers, of which the fol lowing is a specification, reference being had to the accompanying drawing, forming a partthereof.
The main objects of this invention are to sever the tendons, sinews or fibers of meat and particularly of the cheaper cuts or grades, such as round steak, so as to render them tender preparatory to cooking; to facilitate sharpening and renewing the knives; and generally to improve the construction and operation of devices for this purpose.
It consists in the construction, arrangement and combination of parts as hereinafter particularly described and pointed out in the claims.
In the accompanying drawing like characters designate the same parts in the several figures.
Figure 1 is a side elevation of a machine embodying the invention; Fig. 2 is a vertical cross section of the same on the line 2 2, Fig. 1; and Fig. 3 is a perspective view of a part of one of the detachable knife plates with which the rocker or segment wheel is provided.
In one of the preferable forms of the embodiment of the invention as shown by the drawing the machine comprises a frame a, which may be conveniently made of cast iron or other metal, and is formed with legs 6 and at the sides with parallel horizontal ways 0. It is also formed or provided at the sides with opposite standards d, which terminate at their upper ends in bearings e for a cross shaft f rotatably mounted therein. At one end the shaft f is provided with a crank handle g, and adjacent to the inner side of one of the standards cl it is provided with a segment gear h, which may be fastened thereon by a set screw 6. A reciprocating table 9', which may be made of wood, is fitted to slide on the ways 0 and is provided at one side with a rack 70 meshing with the segment gear h. On the shaft 7 is mounted a rocker or segmental cutter head which is preferably constructed of two segment wheels Z, secured on the shaft f adja cent to the standards d by set screws m. To the peripheries or rims of these wheels are detachably fastened at their ends by screws a or other means, cross plates or bars 0, each formed on its outer side with a row or series of chisel pointed blades or knives 7). These plates are arranged side by side like staves parallel with the rocker shaft f, with the blades or knives p projecting outward and radially therefrom. The blades or knives p are staggered in arrangement, or the blades or knives of each plate or row alternate with those of the adjoining row or rows, as shown in Fig. 2. The edges or points of the blades or knives are made and set to approach close to the upper face of the table j on the under side of the rocker or cutter head.
In the operation of the machine the meat to be treated is placed on the table j, when it is withdrawn at either end of the machine from underneath the rocker. The operator then turns the crank handle 9 back and forth, thereby imparting a rocking movement to the cutter head and blades p and a simultaneous reciprocating movement to the table j. As the meat passes to and fro on the table underneath the cutter head it is thickly perforated or closely pierced by the blades 3), which sever the fibers and thereby make it tender. The position of the meat may be slightly shifted on the table j so that the blades 2/) will puncture or pierce it in different places as it is carried back and forth a number of times underneath the cutter head. A few turns or oscillations of the crank handle 9 will be sufficient ordinarily to make the meat tender and prepare it for cooking.
The construction of the rocker or cutter head, as herein shown and described, provides for easily removing and replacing broken or defective knife plates or sections 0, and facilitates sharpening the blades or knives p when they become dull with continued use.
I claim:
1. In a meat chopper and tenderer the combination of a frame having standards and parallel horizontal ways at the sides, a reciprocating table fitted to slide on said ways and provided on one side with a rack, a cross shaft having bearings in said standards and provided at one end with a crank,
a segment gear fixed on said shaft and.
meshing with said rack, a segment wheel mounted on said shaft and provided on its periphery with a plurality of separated fiber severing blades arranged to pierce meat placed on said table.
2. In a meat chopper and tenderer the combination of a frame having a pair of opposite standards and parallel horizontal ways at the sides, a table fitted to reciprocate on said ways and provided at one side with a rack, a cross shaft rotatably sup ported above said table in said standards and provided at one end with a crank handle, a segment gear fixed on said shaft in mesh with said rack, a pair of segment wheels mounted on said shaft adjacent to said. standards, and a plurality of cross plates each provided with a series of sharp blades and detachably fastened at the ends to the rims of said wheels.
3. In a meat chopper and tenderer the combination of a frame having two opposite standards and parallel horizontal ways at the sides, a reciprocating table fitted to slide 011 said ways and provided at one side with a rack, a cross shaftrotatably mounted in said standards above said table and provided at one end with a crank handle, a segment gear fixed on said shaft and meshing with said rack, and a segment wheel mounted on said shaft and provided on its periphery with staggered radial cutting blades arranged to closely pierce a piece of meat carried on said table underneath said wheel.
4;. In a meat chopper and tenderer the combination of a frame having two opposite standards and parallel horizontal Ways at the sides, a reciprocating table fitted to slide on said ways and provided with a longitudinal rack at one side, a cross shaft rot-atably mounted in said standards and provided at one end with a crank handle, a segment gear fixed 011 said shaft and meshing with said rack, a pair of segment wheels mounted on said shaft adjacent to said standards, and cross plates detachably fastened at the ends to the rims of said wheels side by side and each provided with a row of cutting blades, the blades of each plate alternating with those of the adjoining plate or plates.
