Subject of the invention is a knife with removable blade (2), which due to the adjustment in each corresponding position and also in the case of replacement can be moved in the longitudinal direction of the knife. The advantage of the knife according to the invention is that on one side during cutting the blade (2) is firmly held in the selected position, while on the other it allows a quick shift or replacement of the blade (2) prior to cutting or after it, while subsequently it can be fastened in the required position. For this purpose the knife includes a holder (1), which in its longitudinal direction holds a moving blade (2) in the corresponding guide (113) which can be fastened in any required position, and can be form-fittingly attached with a control assembly (10) which can also be moved in the direction of the holder (1).
