Claims (11)
1. Применение дрожжевого экстракта, содержащего нуклеиновые кислоты в количестве, по меньшей мере, 10 вес.%, предпочтительно, по меньшей мере, 15 вес.%, более предпочтительно от 20 до 95 вес.%, ещё более предпочтительно от 30 до 48 вес.%, к общему весу указанного экстракта, указанные нуклеиновые кислоты образованы фрагментами рибонуклеиновой кислоты (РНК), для осветления сусла и жидкостей, в частности, напитков, выбранных из вина, чая, пива или фруктовых соков.
2. Применение экстракта по п. 1, при этом каждый из указанных фрагментов РНК экстракта имеет среднюю молекулярную массу более 10 кДа, предпочтительно от 30 до 110 кДа.
3. Применение экстракта по п. 1 или 2, при этом экстракт также содержит минеральные вещества, сахариды, такие как глюканы и маннаны, и свободные аминокислоты.
4. Применение экстракта по любому из пп. 1-3, при этом экстракт имеет вид порошка или более или менее концентрированной жидкости, предпочтительно вид порошка.
5. Применение экстракта по любому из пп. 1-4, при этом дрожжи для экстракта выбираются из группы, включающей Saccharomyces, Kluyveromyces, Torula и Candida, являются предпочтительно Saccharomyces, преимущественно Saccharomyces cerevisiae.
6. Применение по любому из пп. 1-5 для осветления вин.
7. Применение по п. 6, при этом дрожжевой экстракт имеет вид порошка и применяется в количестве от 0,1 до 50 г на гектолитр вина, предпочтительно от 5 до 30 г/гл вина.
8. Применение по любому из пп. 1-5 для осветления чая, и в частности, для осаждения танинов и/или пигментов чая.
9. Применение по п. 8, при этом дрожжевой экстракт имеет вид порошка и применяется в количестве от 0,01 до 5 г/л чая, предпочтительно от 0,05 до 1 г/л чая.
10. Применение фрагментов рибонуклеиновой кислоты дрожжей, выбранных из группы, включающей Saccharomyces, Kluyveromyces, Torula и Candida и их смеси, для осветления сусла и жидкостей, в частности, напитков, выбранных из вина, чая, пива или фруктовых соков.
11. Применение по п. 10 для осаждения танинов и/или пигментов, содержащихся в чае.
