Abstract

A method of modifying a mass of cheese, such that a shaped pop-out section is provided, comprises presenting the mass on a conveyor under a tubular tool, pressing the tool into the mass against the reaction of the conveyor or an underlying support thereof to define the outline of a shape in the mass. The tool is then withdrawn from the mass whilst both the mass internally and externally of the outline is held against any substantial lifting from the underlying conveyor. The modified mass is then moved on the conveyor from under the tubular tool. The tool is able to define a pop-out shape in a slice, or an outline in a block of cheese which will become a pop-out section when the block is sliced.
