Abstract
La presente invención se refiere a una composición de confitería, comprendiendo: 70 a 98 por ciento en peso, en base al peso de la composición de confitería, de partículas sólidas que comprende un poliol recubierto que comprende sorbitol, isomalta o mezclas de los mismos, recubierto con partículas minerales finas o un poliol de recubrimiento y 0.1 a 20 por ciento en peso, en base al peso de la composición de confitería, de un controlador de difusión seleccionado del grupo que consiste de goma xantana, carboximetil celulosa, metil celulosa, hidroxipropilmetil celulosa, almidón, almidones modificados, inulina, konjac, quitosano, tragacanto, karayá, ghatti, alerce, carragenina, alginato, alginato químicamente modificado, agar, goma guar, goma de algarrobo, llantén de arena, tara, gelana, curdlana, pulana goma arábiga, gelatina pectina y mezclas de los mismos.
