Abstract

La invención se relaciona con un método para producir una emulsión de aceite en agua a base de plantas que comprende las etapas de proporcionar una composición de ingredientes que está libre de proteína láctea, dicha composición comprende de 1.5 a 5 % en peso, preferentemente de 2 a 5 % en peso, de proteínas, en donde la proteína consiste solo en proteína vegetal, de 0.5 a 10.5 % en peso, preferentemente de 1.5 a 7.5% en peso, de aceite, y que tiene un pH de 5.3 - 6.7, preferentemente de 5.6 - 6.6, opcionalmente, añadir cationes divalentes para proporcionar una concentración de 1 - 5 mM de cationes divalentes libres en la composición de ingredientes, opcionalmente añadir cationes monovalentes para proporcionar una concentración de 1 - 20 mM de cationes monovalentes libres en la composición de ingredientes y homogeneizar y posteriormente tratar térmicamente la composición de ingredientes a una temperatura de 80 °C - 100 °C durante un período de 0.5 - 15 min o un tratamiento térmico con temperatura ultraalta (UHT, por sus siglas en inglés) por encima de 135 °C durante 3 a 30 segundos para formar proteínas aglomeradas que comprenden proteínas vegetales y aceite, y cizallar la composición durante o después del tratamiento térmico para reducir el tamaño de las proteínas aglomeradas, los aglomerados tienen un tamaño de 5 a 50 micras según se midió con el diámetro medio D(4,3) medido mediante difracción láser después del cizallamiento. La invención se relaciona, además, con una emulsión de aceite en agua a base de plantas obtenida mediante el método, y un uso de la emulsión de aceite en agua a base de plantas para usar en productos alimenticios y de bebidas.
