Abstract

La presente invención se refiere a una levadura de fermentación alcohólica que tiene resistencia a limoneno, el cual es un inhibidor de la fermentación, y a un método para producir etanol usando la levadura de fermentación alcohólica. Una levadura de fermentación alcohólica Saccharomyces cerevisiae (Depósito No. NITE BP-890), la cual tiene resistencia a limoneno y puede crecer en la presencia de limoneno a una concentración de 0.1-0.5% en peso, y un método para producir etanol usando la levadura de fermentación alcohólica.
