본 발명은 물에 친화력이 낮은 단백질을 특이적으로 분해하는 단백질 가수분해효소를 생산하는 바실러스(Bacillus)속 균주와, 이 균주를 이용하여 신규한 단백질 가수분해효소를 생산, 사용하는 방법에 관한 것으로, 본 발명에 의하면 탈지대두분을 특이적으로 분해하는 새로운 단백질 가수분해효소를 생산하는 균주, Bacillus sp, NS 15-4와 그로부터 분리, 정제되는 탈지대두분의 가수분해효소가 제공된다.The present invention relates to a Bacillus genus strain that produces a proteolytic enzyme that specifically degrades a protein having low affinity for water, and a method for producing and using a novel protease using the strain.
