The present invention relates to a method for preparing a salad for instant food and to a salad for instant food prepared using the same. More specifically, it relates to a method for preparing a salad for instant food that can increase the shelf life of a salad for instant food and maintain a crisp texture peculiar to fruits and vegetables for a long time, and a salad for instant food prepared using the same.

Salad is a western food that is eaten by mixing vegetables, fruits and meat products evenly and seasoned with mayonnaise or dressing.

The word salad is derived from the Latin word sal (salt), and it is believed that Western people who ate a lot of meat had a habit of sprinkling salt on raw vegetables, and it is said to have been eaten since Roman times BC. Originally, it is known that herbs such as garlic, parsley, celery, and watercress (cresson) were used as ingredients to help digestion and absorption. It is widely used as an essential food for acidic foods, and is widely used as an essential food for acidic foods because it is eaten with fresh alkaline vegetables, which is an acidic food such as beef steak and roast beef, and is good for its palatability, has a good nutritional balance, and is effective for absorption. You can play a role of boosting your taste buds by choosing.

On the other hand, as modern people's interest in diet is increasing, the trend of replacing meals with salads and fruits is increasing, and as food processing technology is developed, sliced fruits and various vegetables are used as salad sauces. It is packaged in a container together with the product so that consumers can easily eat salads as a substitute for meals without going through a special process.

However, since salads for ready-to-eat food are provided to consumers through an intermediate distribution process after cutting, washing, and packaging fruits and vegetables at the factory, the hygienic part of the salad processing process at the processing stage is neglected and pesticides There is a problem with the possibility of the component remaining and the growth of various types of bacteria.

In addition, due to the characteristics of ready-to-eat salads, browning of fruits and vegetables may occur due to delays in the distribution process, etc., and there is a problem that may cause food poisoning to consumers who consume them.

Furthermore, the crispy texture of fruits and vegetables is combined with the sauce of the salad and acts as an important factor in determining the taste of the salad. There is a problem in that the texture is lower than when a salad is prepared using fresh fruits and vegetables directly at home due to the deterioration.

In order to improve the above problem, it is urgent to develop a composition for inhibiting browning that can sterilize bacteria that may exist in fruits and vegetables, inhibit browning, and maintain a crispy texture for a long time, and a method for preparing a salad for ready-to-eat food using the same.

That is, the plant extract includes not only those obtained by using the above-described extraction solvent, but also those obtained by additionally applying a purification process thereto. For example, fractions obtained by passing the extract through an outer filtration membrane as long as it has a certain molecular weight cut-off value, separation by various chromatography (made for separation according to size, charge, hydrophobicity or affinity), etc. Fractions obtained through various purification methods are also included in the plant extract of the present invention.

The composition for inhibiting browning of fruits and vegetables according to an embodiment of the present invention is a natural selected from the group consisting of cornus milk extract, sangbaekpi extract, skewer extract, wiryeongseon extract, and mixtures thereof in a mixture containing neutral water, chitosan and cysteine. It may further contain an extract.

Browning is a phenomenon in which a specific object turns brown, and can be divided into enzymatic browning and ineffective browning. Enzymatic browning occurs mainly in fruits and vegetables, and non-enzymatic browning occurs mainly in processed products such as bread and confectionery. Browning damages the appearance of fruits and vegetables and reduces nutrients in foods such as vitamins and amino acids.

The cause of this browning phenomenon is an oxidation reaction, and more specifically, a phenomenon in which a group 1 substance called polyphenol-based substances contained in fruits and vegetables is oxidized by oxygen in the air, causing a change called condensation to change into a browning substance. to be.

However, oxidation does not proceed by leaving it in the air as it is, and an oxidizing enzyme that accelerates the oxidation reaction must be present. That is, if all three elements of a polyphenol-based material, oxygen and oxidase are not prepared, browning does not occur.

Therefore, if any of the above three factors that cause browning do not work, browning can be prevented. For this reason, browning can be prevented to some extent by blocking the air by inhibiting the enzyme action, such as immersing in salt water or acidic solution and heating for a short time. Also, it is also possible to inhibit acid by adding a substance having a strong reducing effect such as vitamin C. It is being used in one way.

The chitosan is a linear polysaccharide composed of D-glucosamine and N-acetylglucosamine, and is a material obtained by deacetylating chitin, a component of crustaceans such as crab and shrimp, to be absorbed in the human body.

It has a role of adsorbing and excreting harmful cholesterol in the body, that is, de-cholesterol, and has a great effect in preventing and improving vascular diseases. In addition, with regard to the anticancer effect, it does not directly destroy cancer cells, but acts to strengthen immunity and prevent the proliferation and growth of cancer cells by adsorbing to abnormal cells, thereby inhibiting the proliferation of cancer cells.

On the other hand, chitosan has an antioxidant effect, is effective in activating aged cells, and has an effect of promoting wound healing, so it is used in the development of medical products such as artificial skin, artificial blood vessels, and surgical rooms. The artificial skin used for burns was mainly composed of chitin and chitosan, and it is used as a functional material for skin, hair, and cosmetics because it has skin moisturizing, UV-blocking, and hair-protective effects.

In addition, there are additional effects such as antiviral action, improvement of liver function, and blood sugar control.

However, when chitosan is overdose, gastrointestinal symptoms such as diarrhea, vomiting, and abdominal bloating, and excessive diuretic symptoms may appear, and it has the property of inhibiting the absorption of vitamins A, D, E and K, which are fat-soluble vitamins, causing problems when overdose. Can be.

Cysteine is a sulfur-containing amino acid that is naturally present in many proteins, even in small amounts. Cysteine is the only 20 basic amino acids that contain a thiol group (-SH). Thiol groups undergo a redox reaction when cysteine is oxidized to form cystine. Cystine refers to the combination of two cysteines through a sulfur bond, and this reaction is reversible. Thus, the reduction of this cystine can form two cysteines. It is one of the amino acids contained in glutathione, an antioxidant, as it plays a role in helping the catalytic action of enzymes and has antioxidant power due to its ability to participate in redox.

Cysteine excretes liver wastes and toxins out of the body, and has a function of promoting metabolism. It prevents fat accumulation in the liver by activating metabolism and burning cholesterol in the blood. In addition, it plays a role in promoting metabolism by releasing and detoxifying harmful heavy metal components in the body.

Furthermore, the sulfur component contained in cysteine is characterized as an ingredient necessary to make healthy skin, hair, and nails, and is used as a material to make neurotransmitters such as serotonin, noradrenaline, and dopamine. In addition, it protects the body from harmful metals, free radicals caused by smoking, drinking, etc. through antioxidant activity, and promotes the release of melanin by inhibiting the activity of enzymes that make melanin, which are the cause of spots and freckles. Also do. However, excessive consumption may cause nausea, dizziness, and hypotension, and if the concentration of cysteine in the blood rises, there is a possibility of Dongman hardening.

Cornus officinalis is a deciduous broad-leaved small arboreous tree belonging to the Cornaceae family. Cornus officinalis is a deciduous broad-leaved small arboreous tree belonging to the Cornaceae family. It has a dry flesh quality, slightly warm in nature, sour, astringent taste, and no poison. The flesh (fruit) contains glycosides such as cornin, morroniside, loganin, tannin, and saponin, and organic acids such as wine, malic and tartaric acid. The Gracilaria verrucosa (Hudson) Paperfuss is an algae of the red algae family, and is called Kosirak in Jangheung, Wando, Haenam, and Jindo, and mandukfish near Busan is also called Kosiraegi. Stems with a diameter of 1-3㎜ usually grow about 20cm and grow up to 2-3m. The body is gathered from small tray-shaped roots and has a cylindrical shape. It is densely divided into pinnates and branches are skewed to one side. Branches extending from the body are wire-shaped with a diameter of 1 to 2 mm, and are blackish purple or dark brown. It lives on rocks and seashells in the intertidal zone, especially on pebbles and piles of shallow beaches where river water flows into the sea, and grows on reefs in the open sea. In particular, they form a large colony in the inner bay, and there are sometimes very large individuals in places where fresh water flows. Trunks and branches that have fallen from their habitat can wander anywhere in the sea, and the growth between them is fast, so they are larger than ordinary plants that live together. It is edible or mixed with agar to make agar, and the collected items are dried and stored. Blanching in hot water destroys the reddish pigment, phycopyrin, and turns green, leaving only the greenish pigment, chlorophyll. Kosiraegi are in season from early spring to late autumn, and are characterized by their low content of fat and carbohydrates and a large amount of calcium and dietary fiber.
