Abstract
본 발명은 천일염을 일정온도와 일정시간 동안 가열하여 알칼리성을 띄게 하여 소금물을 만들고, 볏짚과 배양된 바실러스 서브틸리스(Bacillus subtillis)균 및 기타 기능성 첨가물을 메주에 혼합하고, 여기에 염화칼륨을 혼합하여 소금의 염도를 낮출 수 있게 됨으로써 높은 단백질 분해율로 인하여 아미노산 함량이 높고, 볏짚 삭는 냄새와 같은 전통 조선 된장 특유의 향미를 느낄 수 있는 저염 알칼리 된장과 간장 및 그 제조 방법을 제공한다.

Claims (5)
- 무쇠솥에서 800~900℃의 온도로 8~10시간 구워 알칼리성 소금을 제조하는 단계(S100);
정수 60~75중량부와, 고로쇠 수액 10~20중량부와, 상기 단계(S100)에서 제조된 알칼리성 소금 10~20중량부를 혼합하여 염도를 1.5~2.0%로 맞춘 소금물을 2~3일 동안 숙성시키고, 필터에 여과시켜서 장물을 준비하는 단계(S200);
메주콩을 익히는데 사용된 콩물이 제거되지 아니한 상태로 수분이 증발되도록 메주콩을 익히는 단계(S300);
상기 단계(S300)에서 준비된 메주 60~75중량부와, 균주 0.1~0.5중량부와, 송담 추출액 10~25중량부와, 버섯추출액 10~15중량부와, 황기 추출액 5~10중량부를 혼합한 메주 반죽물로 메주 성형물을 성형하는 단계(S400);
상기 단계(S300)에서 준비된 메주 성형물을 볏짚이 깔려져 있는 삼베천에 감싸서 볏짚이 메주 성형물에 접촉되도록 하여 상온에서 2~3개월 동안 건조 숙성시키는 단계(S500)
상기 단계(S200)에서 준비된 장물 40~50중량부와, 상기 단계(S500)에서 준비되어 삼베천에 나누어져서 담겨지게 되는 메주 반죽물 25~35중량부와, 염화칼륨 3~8중량부와, 대추 추출물 5~10중량부와, 씨간장 5~10중량부를 넣은 혼합물을 상온에서 35~45일 동안 장담그기를 하는 단계(S600);
그리고 필요한 양 만큼 장가르기를 하여 된장과 간장을 분리하는 단계(S700)를 포함하는 저염 알칼리 된장과 간장의 제조 방법. - 청구항 1에 있어서,
상기 단계(S600)에서 혼합물 70~80중량부에 세절된 송담 10~20중량부를 더 넣고 장담그기를 하는 것을 포함하는 저염 알칼리 된장과 간장의 제조 방법. - 청구항 1에 있어서,
상기 균주는 메주콩 1g당 고초균(Bacillus Subtilus) 1×105, 바실러스 스틸러스균(Bacillus subtillis)1×104, 황국균(Aspergillus Olyzae) 1×104, 젖산균(Pediococccus Halo philus) 5×103, 효모균(Saccharomyces Rouxii) 1×103의 비율로 혼합되고, α-화 소맥분 85~95중량부와 균주 5~15중량부가 혼합되는 것을 특징으로 하는 저염 알칼리 된장과 간장의 제조 방법. - 된장 및 간장을 제조함에 있어서,
정수 60~75중량부와 고로쇠 수액 10~20중량부가 혼합된 장물 제조용수에 무쇠솥에서 800~900℃의 온도로 8~10시간 동안 구운 소금 10~20중량부를 혼합한 장물 40~50중량부와;
메주 반죽물 60~70중량부와, 균주 0.1~0.5중량부와, 송담 추출액 10~20중량부와, 버섯추출액 10~15중량부와, 황기 추출액 5~10중량부와, 염화칼륨 3~8중량부와, 대추 추출액 5~10중량부, 씨간장 5~10중량부를 혼합하고 장가르기를 하여 얻어지는 것을 특징으로 하는 저염 알칼리 된장 및 간장. - 청구항 3에 있어서,
장물의 염도가 1.5~2.0%인 것을 특징으로 하는 저염 알칼리 된장 및 간장.
