Abstract
본 발명에 따른 기능성 조미 김의 제조방법은 건조 김을 준비하고, 상기 건조 김의 표면에 식용유를 도포하는 건조 김의 표면에 식용유를 도포하는 단계(S100); 상기 식용유가 도포된 김에 게 분말, 토마토 분말 및 소금을 첨가하여 조미하는 식용유가 도포된 김을 조미하는 단계(S200); 및 상기 조미된 김에 열원을 가하여 구움으로써 조미 김을 제조하는 조미된 김을 굽는 단계(S300)를 포함한다.
상기한 구성에 의해 본 발명은 게 분말 및 토마토 분말을 이용하여 조미된 김을 제조함으로써, 게 분말 및 토마토 분말의 영양 성분과 김 고유의 풍미를 동시에 느낄 수 있다.

Claims (5)
- 건조 김을 준비하고, 상기 건조 김의 표면에 식용유를 도포하는 건조 김의 표면에 식용유를 도포하는 단계(S100);
상기 식용유가 도포된 김에 게 분말, 토마토 분말 및 소금을 첨가하여 조미하는 식용유가 도포된 김을 조미하는 단계(S200); 및
상기 조미된 김에 열원을 가하여 구움으로써 조미 김을 제조하는 조미된 김을 굽는 단계(S300)를 포함하는 것을 특징으로 하는 기능성 조미 김의 제조방법.
- 제 1항에 있어서,
상기 식용유가 도포된 김을 조미하는 단계(S200)에서 상기 게 분말, 토마토 분말 및 소금은 건조 김 100 중량부에 대해 게 분말 1 내지 30 중량부, 토마토 분말 1 내지 30 중량부 및 소금 5 내지 20 중량부의 중량 비율로 계량되어 첨가되는 것을 특징으로 하는 기능성 조미 김의 제조방법.
- 제 2항에 있어서,
상기 토마토 분말은 토마토를 채취하고 세척하여 상기 토마토에 부착되어 있는 이물질을 제거하고, 상기 세척된 토마토를 온도 20 내지 25℃ 및 습도 35 내지 45%로 유지되는 그늘에서 10 내지 30시간 동안 건조하며, 상기 건조된 토마토를 75 내지 85℃ 온도의 수증기로 5 내지 20분 동안 가열하는 제1 증숙과, 상기 가열된 토마토를 90 내지 95℃ 온도의 수증기로 30분 내지 1시간 동안 가열하는 제2 증숙을 거쳐 증숙하고, 상기 증숙된 토마토를 건조하여 상기 토마토에 잔류하고 있는 수분을 제거하며, 상기 건조된 토마토를 100 내지 200메쉬(mesh)의 입자크기로 분말화하여 제조된 것을 특징으로 하는 기능성 조미 김의 제조방법.
- 제 3항에 있어서,
상기 게 분말은 게를 준비한 후 게에 포함되어 있는 배설물이나 불순물을 제거하여 세척하고, 상기 세척된 게를 건조시킨 후 상기 건조된 게와 아로니아 추출액을 혼합한 후 숙성시키되, 상기 건조된 게 전체 100 중량부에 대해 아로니아 추출액 1 내지 5 중량부의 중량 비율로 혼합한 후 3 내지 5℃의 온도에서 1 내지 5시간 동안 숙성시키며, 상기 아로니아 추출액과 혼합되어 숙성된 게를 60 내지 70℃의 온도에서 5 내지 10시간 동안 건조시키고, 상기 건조된 게를 100 내지 200메쉬(mesh)의 입자크기로 분말화하여 제조된 것을 특징으로 하는 기능성 조미 김의 제조방법.
- 제 1항 내지 제 4항 중 어느 하나의 방법으로 제조된 것을 특징으로 하는 기능성 조미 김.
