통상적으로 한천은 우뭇가사리 등의 홍조해초를 건조시킨 것으로서, 갈락토오스가 주성분이며 황산기를 포함한 세포간 점성다당의 다당체의 일종이다. 한천은 세한천 및 분말 한천으로 구분되는데, 세한천은 길고 가느다란 외형을 가지며, 분말 한천은 분말 상태로 분쇄된 한천이다.
