Abstract
이를 위하여 본 발명은 씨를 제거한 동아 과육을 삶아 으깨 동아 과즙을 얻는 단계와, 지에밥, 누룩, 효모, 감미료를 섞어 술밑을 만드는 단계와, 발효조에 상기 동아 과즙과 상기 술밑을 넣고 발효시켜 밑술을 얻는 단계와, 상기 밑술의 고형물을 걸러내고 물을 가수하여 알코올 도수 6~8%로 희석하는 단계를 포함하는 것을 특징으로 한다.
상기의 동아 과육 100중량부를 기준으로 지에밥은 100 내지 150중량부, 누룩은 40 내지 70 중량부, 효모는 7 내지 15중량부, 감미료는 30 내지 50중랑부인 것을 특징으로 한다.
그리고 상기의 밑술을 얻는 단계는 구기자, 맥문동, 오미자, 황기, 감초, 계지, 갈근, 숙지황, 천마, 인진, 지초, 신선옥, 방기, 백봉령, 산약과 같은 한약재를 적어도 1종 이상 선택하여 상기 동아 과육 대비 2 내지 4중량부를 명주 망에 담아 상기 발효조에 더 투입하는 것을 특징으로 한다.

Claims (3)
- 씨를 제거한 동아 과육을 삶아 으깨 동아 과즙을 얻는 단계와,
지에밥, 누룩, 효모, 감미료를 섞어 술밑을 만드는 단계와,
발효조에 상기 동아 과즙과 상기 술밑을 넣고 발효시켜 밑술을 얻는 단계와,
상기 밑술의 고형물을 걸러내고 알코올 도수 6~8%로 희석하는 단계를 포함하는 것을 특징으로 하는 동아 막걸리 제조방법. - 제 1항에 있어서,
