어린이 20인 및 성인 20인을 대상으로 하여 상기 실시예 및 비교예에서 제조된 콩고기 육포를 시식하게 한 후, 관능을 평가하게 한 다음, 그 결과를 평균한 값을 하기 표 1에 나타내었다. 맛, 식감, 전체적인 기호도 항목에 대하여 평가하였다.After tasting the beef jerky prepared in Examples and Comparative Examples for 20 children and 20 adults, the sensory evaluation was made, and then the average value of the results is shown in Table 1 below. 조미 첨가물로서 고추참치, 조릿대, 청미래 추출물을 첨가한 실시예 1, 2, 3의 경우 맛, 식감, 전체적인 기호도의 측면에서 우수한 것으로 확인되었다. 조미 첨가물이 첨가되지 않고 날 콩을 사용하여 제조된 콩분말을 사용한 비교예 1이나, 콩분말을 과량 첨가한 비교예 2의 경우 맛이나 전체적인 기호도 측면에서 상대적으로 좋지 않은 것으로 확인되었다.In the case of Examples 1, 2, and 3 added with red pepper tuna, stalk, and blue rice extract as seasoning additives, it was confirmed that they were excellent in terms of taste, texture, and overall taste.
