Claims (10)
- 삼계탕 부재료와 미리 수침 처리한 쌀을 라이스페이퍼로 감싼 후 냉동시키고, 세척 및 염지한 삼계탕용 닭의 복강 내에 넣어 냉동 포장하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 라이스페이퍼는 10 내지 35℃의 물에 수침하여 습윤 상태인 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 냉동은 -15 내지 -40℃에서 냉동하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 염지는 습염법에 의한 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제4항에 있어서, 상기 습염법은 세척한 닭을 13 내지 17% 농도의 소금물에 25 내지 35초 동안 담가 가염하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 쌀은 10 내지 30℃의 물에서 13 내지 30시간 동안 불린 찹쌀인 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 쌀은 닭 중량 대비 11 내지 19 중량% 포함하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항에 있어서, 상기 포장시에 조미스프를 함께 또는 별개로 포장하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제8항에 있어서, 상기 조미스프는 조미스프 중량 대비 4 내지 6 중량%의 백후추가 포함하는 것을 특징으로 하는 즉석조리용 냉동삼계탕의 제조 방법.
- 제1항 내지 제9항 중 어느 하나의 방법을 사용하여 제조된 즉석조리용 냉동삼계탕.
